Ingredients

  • 50 grams butter
  • 100 grams coffee cookies
  • 100 grams cream cheese, room temperature
  • 1 egg , size M
  • 1 tablespoon sour cream
  • 75 gram sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 12 teaspoons forest fruit jelly

Instructions

  • Preheat the oven to 190 degrees Celsius (375°F). If using a convection oven, reduce temperature by 20°C (30°F).
  • Lightly grease a 12-cup muffin pan with oil or baking spray, or line with paper baking cups.
  • Place the coffee cookies in a food processor and pulse until finely ground into crumbs.
  • Melt the butter in a small pan or microwave-safe bowl. Pour the melted butter over the cookie crumbs.
  • Stir well until the crumbs are evenly moistened with butter.
  • Divide the biscuit mixture evenly among the bottoms of the 12 muffin molds, pressing firmly to create a compact crust.
  • In a separate bowl, using a hand mixer, beat the room temperature cream cheese with the sugar on high speed for about 3 minutes until smooth and creamy.
  • Add the egg (size M), sour cream, vanilla extract, and lemon juice to the cream cheese mixture. Mix for another 3 minutes until fully incorporated and smooth, scraping down the sides of the bowl as needed.
  • Evenly divide the cream cheese mixture over the 12 prepared muffin molds, filling each one almost to the top.
  • Gently heat the forest fruit jelly in a small saucepan or microwave until it becomes slightly liquid and easy to spoon.
  • Spoon a teaspoon of the warmed jelly on top of each cheesecake. Using the back of the spoon or a toothpick, gently swirl the jam through the batter to create a pretty marbled effect.
  • Carefully place the cheesecakes in the preheated oven and bake for exactly 10 minutes.
  • After 10 minutes, turn the oven off, but do NOT open the oven door. Leave the cheesecakes inside the closed oven for an additional 30 minutes to allow them to cool down slowly and prevent cracking.
  • Remove the cheesecakes from the oven and let them cool completely at room temperature. Once cooled, transfer them to the refrigerator and chill for at least 3 hours, or preferably overnight, for best texture and flavor.
  • Once thoroughly chilled, carefully loosen the edges of each cheesecake with a thin spatula or knife and remove them from the muffin mold. Serve and enjoy!
