  • Begin by preheating your oven. If you’re using a standard oven, set it to 350 °F. If you have a convection oven, adjust to 320 °F for even baking.
  • Prepare your 10-inch (26 cm) springform pan. Lightly coat the inside with a thin layer of oil (this helps prevent sticking), then generously dust it with cocoa powder. Tap out any excess cocoa powder from the tin to ensure a clean, non-stick surface and a beautifully dark cake.
  • For an extra layer of protection against sticking and to ensure easy removal, place a round of parchment paper on the bottom of your prepared baking tin.
  • In a large mixing bowl, combine all the dry ingredients: Dutch unprocessed cocoa, all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk them together thoroughly to ensure they are well combined and there are no lumps, which will help create an even crumb structure in your cake.

  • With your mixer on the lowest speed, gradually add the wet ingredients to the dry. Start by adding the two large eggs one at a time, ensuring each is fully incorporated before adding the next. Then, add the egg yolk, warm water, vanilla extract, white vinegar, milk, and sunflower oil. It’s essential to add each ingredient only after the previous one has been fully mixed in to create a smooth and uniform batter.
