Ingredients

Salmon

  • 1 pound salmon fillets, center cut, skin off
  • ½ cup Mirin wine

Smoking mix

  • 1 cup white rice, long grain
  • 1 cup sugar
  • 1 cup oolong tea , brewed

Wasabi Potato Latkes

  • 1 pound potatoes, peeled, boiled in salted water for 20 minutes, still warm
  • 1 tablespoon butter
  • 2 spring onions, sliced
  • 1 tablespoon prepared horseradish
  • 1 tablespoon wasabi paste
  • salt and pepper
  • 1 cup all-purpose flour
  • 3 eggs, size L, beaten
  • 1 cup dry bread crumbs

Salmon

  • Cut the salmon into 4 equal pieces. Place them in a small baking dish or shallow pan.
    1 pound salmon fillets
  • In a bowl, mix mirin, water, sugar, and salt. Stir until dissolved. Add the ginger and peppercorns.
    ½ cup Mirin wine, ½ cup water, 1 tablespoon sugar, 1 tablespoon salt, 1 inch fresh ginger, 1 teaspoon black peppercorn
  • Pour the mixture over the salmon and let it marinate for 1 hour.
  • Remove the salmon from the marinade and place it in a bamboo steamer.
  • Line a wok with foil. Add the rice, sugar, and tea. Mix well and heat on medium until the mixture starts to smolder.

  • In a bowl, mash the warm potatoes with butter.
    1 pound potatoes, 1 tablespoon butter
  • Mix in the spring onions, horseradish, and wasabi paste. Season with salt and pepper.
