Ingredients

  • 1 liter vegetable stock, unsalted
  • 1 kg broccoli
  • 50 grams goat cheese, soft
  • 2 tablespoons olive oil , extra vierge, at taste
  • 1 teaspoon salt
  • â…› teaspoon ground black pepper
  • â…› teaspoon nutmeg

Instructions

  • Wash the broccoli thoroughly and cut it into manageable florets.
  • Bring the vegetable stock to a boil in a large pot. Add the broccoli florets and cook for approximately 8 minutes, or until the broccoli is tender. You can check for doneness by piercing a floret with a fork; it should slide in and out easily.
  • Carefully transfer the cooked broccoli to a clean pan. Add 60 mL (approximately 1/4 cup) of the reserved vegetable broth.
  • Using an immersion blender, carefully puree the broccoli and broth until completely smooth. If you don’t have an immersion blender, transfer the mixture to a regular blender and blend until smooth, then return to the pan.
  • Gradually add more of the reserved vegetable broth, stirring constantly, until the soup reaches your desired thickness and creamy consistency.
  • Season the soup generously with salt and freshly ground black pepper to taste.
  • Gently reheat the soup over low heat until it is steaming hot, but do not bring it to a rolling boil.
  • While the soup is reheating, cut the soft goat cheese into small cubes for the topping.
  • Ladle the hot, creamy broccoli soup into individual serving cups or small bowls for a cappuccino-style presentation.
  • Garnish each cup by placing some goat cheese cubes in the center of the soup and drizzling a little extra virgin olive oil over the top. Finish with a sprinkle of fresh nutmeg. Serve immediately and enjoy!

  • For the best and freshest flavor, we highly recommend making your own vegetable stock. This way, you have full control over the ingredients and can ensure there are no unwanted additives.
  • When reheating or keeping the soup warm, avoid bringing it to a rolling boil. The ideal temperature is when you see steam rising from the pot but no vigorous bubbles, preserving the delicate flavors and creamy texture.
  • To make this creamy soup recipe entirely vegan, simply substitute the goat cheese with chopped semi-sun-dried tomatoes or a dollop of vegan sour cream/crème fraîche.
