  • A conventional oven is used. When using a convection oven (with air fan) decrease the temperature with 30 °F / 20 °C
  • Parchment paper

Ingredients

  • 300 grams self-rising flour
  • 300 grams honey
  • 2 tablespoons golden syrup
  • 1 teaspoon anise seed
  • 1 tablespoon gingerbread spices
  • pinch salt
  • 1 egg , size L

Instructions

  • Put the flour, honey, golden syrup, anise seed, gingerbread spices and salt in a bowl and mix with a mixer to form a dough.
  • Create a disk of the dough and wrap in plastic.
  • Put at least 1 hour in the refrigerator to cool so it gets less sticky. For a richer flavor and easier handling, an overnight rest is even better.
  • Preheat oven to 180 degrees Celsius (350°F). If using a convection oven, reduce temperature by 20°C (30°F).
  • Line a baking sheet with parchment paper to prevent sticking.
  • On a lightly floured surface (or between two sheets of parchment paper), roll out the dough to an even thickness of about 1 cm (approximately 0.4 inches). This thickness is important for the characteristic chewy texture.
  • Using your chosen cookie cutters, cut out shapes from the rolled dough. Carefully transfer the cut-out cookies to the prepared baking sheet, leaving a little space between each.
