  • 1 shallot, finely chopped
  • 1 clove garlic, crushed
  • 2 cups sieved tomatoes, passata

  • Heat the olive oil in a saucepan over medium heat.

  • Add the finely chopped shallot and fry for about 3 minutes until translucent.

  • Add the crushed garlic and fry for another 30 seconds. Be careful not to burn the garlic, as it will become bitter.

  • Pour the passata into the pan, add the sugar, Italian herbs, and bay leaf, and stir everything well.

  • Bring the sauce to a boil, and reduce the heat when it releases air bubbles. Let the sauce simmer gently for about 10 minutes so that the flavors can mix well.
  • Remove the bay leaf and season the sauce with salt and freshly ground black pepper.

1. Italian Herbs: If you have fresh herbs, use fresh basil, oregano, and thyme. Don’t forget to remove the bay leaf and herbs before serving.
