  • Incorporate the vanilla extract and the large egg into the fluffy butter-sugar mixture. Beat for another minute until well combined, ensuring all ingredients are fully integrated to create a smooth base.

  • Reduce the mixer speed to its lowest setting. Gradually add the all-purpose flour and salt to the wet ingredients. Mix just until a cohesive dough forms. Be careful not to overmix, as this can lead to tough cookies.

  • Gently gather the dough, flatten it into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes. This chilling period is crucial as it helps the butter solidify, preventing the cookies from spreading too much during baking and making the dough easier to handle.

  • Once chilled, take the dough out of the refrigerator. Place it between two sheets of parchment paper and roll it out evenly to your desired thickness, typically about ¼ inch. Using your favorite heart-shaped cookie cutter, cut out individual cookies and carefully transfer them to a baking sheet lined with fresh parchment paper, leaving a small space between each cookie.

  • For best results and to ensure your heart cookies maintain their beautiful shape, place the entire baking sheet with the cut-out cookies back into the refrigerator for another 30 minutes. This second chilling step prevents the dough from spreading excessively in the hot oven, resulting in perfectly defined heart shapes.

  • Meanwhile, preheat your oven to 350 °F (175 °C) for conventional ovens or 320 °F (160 °C) for convection ovens. Prepare your baking racks for even heat distribution.

  • Bake the chilled heart cookies for approximately 10-12 minutes, or until the edges are lightly golden brown. Baking time may vary depending on your oven and the thickness of your cookies, so keep a close eye on them.

  • After baking, allow the cookies to cool on the baking sheet for about 10 minutes. This helps them firm up before transferring. Then, carefully move them to a wire rack to cool completely to room temperature, which is essential before icing.

  • Combine the icing powder (confectioners’ sugar) and water in a medium bowl. Whisk vigorously until the mixture is completely smooth and free of lumps. Add additional water, a teaspoon at a time, if a thinner consistency is desired for flooding the cookies, or less for a thicker outlining consistency.

  • Transfer the prepared royal icing into a piping bag fitted with a very small round tip, or simply snip a tiny corner off the bag. A small opening allows for precise control, which is vital for detailed decoration.

Once the outline sets slightly (after a few minutes), fill the interior of the heart with the remaining icing, gently spreading it with a small spoon or toothpick to ensure full coverage and a smooth surface. This technique is known as “flooding.”

  • Let the base layer of icing harden completely for at least 30 minutes, or longer if your environment is humid. The icing should be firm to the touch before proceeding with any additional decorations.

  • Once the base icing is fully set, unleash your creativity! Using an edible red icing stylus (or another piping bag with a finer tip), you can now add personalized text, sweet quotes, intricate patterns, or small drawings to your heart cookies.
