  • In the bowl of a food processor, combine the all-purpose flour and salt. Pulse briefly to mix.

  • Continue pulsing until the dough just comes together and forms a ball. Be careful not to overmix.

  • Carefully wrap the dough ball tightly in plastic wrap and refrigerate it for a minimum of 3 hours, or ideally overnight, to allow it to firm up and relax.

  • On a lightly floured surface, roll out the chilled dough until it forms a uniform circle approximately 10 inches (26 cm) in diameter. Carefully transfer the dough to line an 8-inch (20 cm) quiche dish.
  • Gently press the dough against the bottom and sides of the quiche dish. Trim any excess dough around the edges using kitchen scissors or a sharp knife, leaving a slight overhang if desired.
  • Using a fork, prick several holes in the bottom of the dough. This helps to prevent air bubbles and ensures a flat, even crust.
  • Line the dough with a piece of parchment paper or aluminum foil, making sure it covers the sides. Fill it with pie weights, dried beans, or baking peas. This step is crucial for blind baking the crust.

  • Return the prepared quiche dish with the lined dough and pie weights to the refrigerator and chill for at least 1 hour. This helps prevent the crust from shrinking during baking.
  • Approximately 30 minutes before baking, preheat your oven to 390 °F (200°C) for initial baking, then reduce to 350 °F (175°C) for the filled quiche.
  • Bake the chilled quiche bottom (with weights) for 20 minutes at 390°F (200°C). Carefully remove the pie weights and parchment/foil. Continue baking for an additional 3-4 minutes, or until the bottom of the crust is lightly golden brown. This ensures a crisp, fully cooked crust.

Assembling and Baking the Gorgonzola Apple Quiche

  • In a medium skillet, melt the butter over medium-low heat. Add the finely sliced onion and sauté gently for about 10 minutes, stirring occasionally, until deeply caramelized and tender. Set aside to cool slightly.

After baking for 25 minutes and allowing it to cool completely to room temperature, wrap it very well in several layers of plastic wrap and then aluminum foil. It can be frozen for up to 1 month. When ready to bake, thaw it in the refrigerator overnight, then bake as instructed for 15-20 minutes at 390°F (199°C) until hot and fully set.
