  • In a large saucepan, combine the rosé wine, sugar, lemon juice, tangerine halves, vanilla extract, black peppercorns, ground aniseed, and instant coffee. Stir to combine the ingredients.

  • Add the peeled pears carefully to the saucepan. Bring the liquid to a boil, then immediately reduce the heat to low. Allow the pears to simmer gently for approximately 20-25 minutes, or until they are tender but still firm.

  • Carefully remove the poached pears from the juice. Strain the poaching liquid through a fine-mesh sieve into a separate bowl or jar. Discard any solids. Let the liquid cool completely before use. (The poached pears can be served as a delightful dessert with some of the strained syrup.)
