If you don’t have store-bought grapefruit juice, start by juicing enough fresh grapefruits to yield 500 ml (approximately 6 medium grapefruits). Set aside.
Rosemary Sugar Syrup

In a medium saucepan, combine 250 ml (1 cup) of water and 200 grams (1 cup) of sugar. Bring the mixture to a boil over medium heat, stirring continuously.

Continue boiling and stirring until the sugar is completely dissolved and the syrup is clear. Turn off the heat.

Carefully add 3 sprigs of fresh rosemary to the hot sugar syrup. Let it steep and marinate for 30 minutes at room temperature.

Place a fine-mesh sieve over a clean bowl or bottle. Pour the rosemary-infused sugar syrup through the sieve to remove the rosemary sprigs. Discard the rosemary.

Transfer the rosemary sugar syrup to a clean bottle or jar and place it in the refrigerator to cool completely. It can be stored for up to 1 week.
Sparkling Grapefruit Mocktail Assembly

- If you prefer to serve this as an alcoholic cocktail for some guests, replace ⅓ cup of sparkling water with ⅓ cup of rum or gin per serving.
- To make it look even more beautiful, prepare a sugar rim. First, dip the glass rims in water, then in some granulated sugar. Let that air dry for 15 minutes.
