Prepare to discover a new family favorite! This Slow Cooker Ajam Pangang Chicken recipe is truly a game-changer – the kind you make once and find yourself coming back to week after week. My family can’t get enough of it, and I’m confident yours will feel the same. It’s incredibly easy to prepare, requires minimal effort, and bursts with a delightful blend of sweet, sour, savory, and a hint of spice that will tantalize your taste buds.
The beauty of this dish lies in its simplicity. You only need one appliance – your trusty slow cooker – and all the ingredients are readily available at your local supermarket. The magic happens as the chicken slowly simmers in a rich, deeply flavored sauce, transforming into unbelievably tender, juicy pieces that are infused with every note of the sweet and savory glaze.

Sweet & Spicy Slow Cooker Ajam Pangang Chicken: A Lighter Take on a Classic
For years, I’ve been a huge fan of Babi Pangang, an Indonesian-Chinese dish traditionally made with crispy pork in a distinctive sweet and sour sauce. That perfect combination of crunchy meat and a rich, tangy glaze is truly a culinary treat. However, I often craved a lighter, less fuss-intensive version that I could enjoy more regularly, especially on busy weeknights. After numerous experiments in my kitchen, I finally perfected this Slow Cooker Ajam Pangang Chicken recipe, which captures all the beloved flavors of the original while offering a healthier and easier preparation method.
The secret to its incredible tenderness and deep flavor lies in the slow cooking process. As the chicken gently cooks, the vibrant sauce slowly penetrates every fiber of the meat, ensuring each bite is succulent and packed with taste. This particular version offers a mild to medium spice level, making it broadly appealing. But don’t worry, it’s incredibly versatile! You can easily adjust the heat to your preference – simply reduce the amount of sambal or sriracha for a milder experience, or amp it up if you crave a fiery kick.
The best part about this Slow Cooker Ajam Pangang is the sheer convenience. All the ingredients are added to the slow cooker, you switch it on, and then you’re free to go about your day. No constant stirring, no worrying about burning, just perfectly cooked chicken waiting for you. It’s an ideal solution for bustling weekdays, when you want a delicious homemade meal without the stress, or even when you’re preparing a larger Indonesian rice table spread. Serve it alongside fluffy rice, tucked into a soft bun for a gourmet sandwich, or with a crisp, refreshing salad. The flavor profile is rich, full-bodied, slightly sticky, and so irresistibly good that you’ll find yourself reaching for seconds, thirds, and planning when to make it again!
Crafting the Perfect Ajam Pangang: My Recipe Development Focus
When developing this Slow Cooker Ajam Pangang Chicken, my primary goal was to create a recipe that delivers maximum flavor and tenderness with minimal effort. I meticulously tested various combinations and techniques, focusing on a few key elements to ensure an outstanding result every time:
- Unparalleled Tender Chicken: The foundation of any great slow cooker dish is perfectly cooked meat. I specifically chose boneless chicken thighs for this recipe. Unlike chicken breasts, which can easily dry out during prolonged cooking, chicken thighs retain their moisture and become incredibly juicy and tender, practically melting in your mouth. This ensures a succulent texture that beautifully absorbs the rich sauce.
- Intense Flavor, Zero Stress: The sauce is where the magic truly happens. I aimed for a complex, well-balanced flavor profile that develops effortlessly. My blend includes rich tomato paste for umami depth, sweet chili sauce for a gentle heat and sweetness, authentic Kecap Manis (Indonesian sweet soy sauce) for its unique caramelized notes, and a touch of honey to enhance the overall sweetness and stickiness. These ingredients work in harmony, creating a deep, sweet-sour, slightly spicy, and deeply savory sauce.
- Effortless, Authentic Seasoning: To capture that classic Ajam Pangang essence without spending hours mixing spices, I leveraged my homemade Babi Pangang spice mix. This pre-made blend includes essential aromatic spices that infuse the chicken with an authentic Indonesian flavor, simplifying the cooking process significantly while delivering consistent, delicious results.

Instructions
-
In your slow cooker, combine all the sauce ingredients: the finely chopped onion, pressed garlic, grated fresh ginger, tomato paste, sweet chili sauce, Kecap Manis, sambal oelek (or sriracha), lemon juice, honey, onion powder, garlic powder, Babi Pangang seasoning, vegetable stock cube, and water. Stir everything thoroughly until the sauce is well combined.1 onion,
3 cloves garlic,
1 inch fresh ginger,
3 tablespoons tomato paste,
⅔ cup sweet chili sauce,
3 tablespoons Kecap Manis,
1½ teaspoons sambal oelek,
½ lemon juice,
3 teaspoons honey,
1 teaspoon onion powder,
1 teaspoon garlic powder,
2 tablespoons Babi Pangang seasoning,
1 cube vegetable stock,
½ cup water -
Now, add the boneless chicken thigh chunks to the slow cooker. Toss them gently to ensure they are thoroughly and evenly coated with the rich Ajam Pangang sauce. This step is crucial for infusing the chicken with maximum flavor as it cooks.2 pounds chicken thigh fillet -
Cover your slow cooker and set it to the LOW setting. Allow the Ajam Pangang Chicken to cook for 4 to 5 hours, or until the chicken is incredibly tender and easily shredded with a fork. If you’re pressed for time, you can use the HIGH setting and cook for 2½ to 3 hours, keeping an eye on it to ensure it doesn’t overcook. -
While the slow cooker does most of the work for you, a quick stir halfway through the cooking time is beneficial if you’re home. This helps ensure all the chicken pieces are evenly coated and absorb the delicious sauce. However, if you’re out and about, don’t worry – the dish will still turn out fantastic without it!
Notes
2. Is this recipe spicy? This Slow Cooker Ajam Pangang Chicken is designed with a mild to medium spice level, offering a pleasant warmth without being overpowering. If you prefer a hotter kick, feel free to add more sambal oelek or sriracha to the sauce. For those who enjoy a milder flavor, simply reduce the amount of spicy paste used.
3. Creative Variations for Your Ajam Pangang:
- Vegetarian Twist: For a delicious plant-based meal, consider replacing the chicken with firm tempeh or savory pulled jackfruit. These ingredients absorb the sauce beautifully and offer a fantastic texture.
- Fruity Freshness: Enhance the sweet and sour profile by adding chunks of fresh or canned pineapple (drained) to the slow cooker during the last hour of cooking. It adds a wonderful burst of flavor and a touch of acidity.
- Lunchtime Delight: Repurpose leftovers or create a delightful lunch by serving the Ajam Pangang in a soft bun. Garnish with quick pickled vegetables and crisp cucumber slices for a refreshing crunch and tangy contrast.
- Garnish for Color & Flavor: A sprinkle of fresh cilantro, chopped green onions, or toasted sesame seeds can elevate both the visual appeal and the flavor of your finished dish.
4. Storage and Reheating Tips:
- Fridge: Store any leftover Slow Cooker Ajam Pangang Chicken in an airtight container in the refrigerator for up to 3 days.
- Freezer: This recipe freezes beautifully! Allow the chicken and sauce to cool completely, then transfer it to a freezer-safe bag or container. It can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat: Gently warm the Ajam Pangang in a pan over medium-low heat, adding a splash of water or broth if the sauce has thickened too much. Alternatively, you can reheat it in the microwave in short intervals, stirring occasionally, until thoroughly heated through. Be careful not to overheat, which can dry out the chicken.
