Ingredients

For the panna cotta

  • 1 tablespoon gelatin powder, or 1 tablespoon agar agar powder for a vegetarian option
  • â…” cup heavy cream
  • ½ cup sugar
  • 2 teaspoon vanilla extract
  • ¾ cup whole milk
  • ¾ cup buttermilk

For the berry foam

  • 2 large eggs, size L, separated
  • â…“ cup sugar
  • ¼ cup water
  • â…” cup unsweetened berry juice, e.g., raspberry, cranberry, or mixed berry

Instructions

Make the panna cotta

  • In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water. Let it soak for 5 minutes until it blooms and softens.

  • In a medium saucepan, gently heat the heavy cream over medium-low heat. Add the sugar and vanilla extract. Stir continuously until the sugar is completely dissolved.
    ⅔ cup heavy cream, ½ cup sugar, 2 teaspoon vanilla extract
  • As soon as the mixture begins to show small bubbles around the edges, remove the saucepan from the heat immediately. Do not allow it to come to a rolling boil.
  • Add the bloomed gelatin to the warm cream mixture. Whisk continuously and vigorously until the gelatin is completely dissolved and you have a smooth, uniform liquid without any lumps.
  • Pour in the whole milk and buttermilk. Whisk everything together thoroughly until the mixture is well combined and homogenous.
    ¾ cup whole milk, ¾ cup buttermilk
  • Carefully pour the panna cotta mixture into individual serving molds, ramekins, or small glasses. Transfer to the refrigerator and chill for at least 3 hours, or preferably overnight, to allow it to set completely.

Make the berry foam

  • In a heatproof bowl, whisk the egg whites (or whole eggs, depending on your preferred foam type) with the sugar until the mixture is light, pale, and fluffy.

  • Place the heatproof bowl over a saucepan of simmering hot water (creating a double boiler, also known as *au Bain-Marie*). Ensure the bottom of the bowl does not touch the water.
  • Gradually add the unsweetened berry juice and water to the egg mixture. Continue whisking constantly over the simmering water.
    ¼ cup water, ⅔ cup unsweetened berry juice
  • Continue to heat and whisk until the mixture thickens considerably and transforms into a light, airy foam. It should hold soft peaks when the whisk is lifted. Crucially, ensure the mixture does not boil, as this will curdle the eggs.

Serve

  • Once chilled and set, carefully remove the panna cotta from its molds (if using) or serve directly in glasses. Spoon approximately 3 tablespoons of the freshly made berry foam generously on top of each panna cotta.
  • For those who desire extra, serve any remaining berry foam in a small bowl on the side, allowing guests to add more to their liking. Garnish with fresh berries or a mint sprig for an extra touch of elegance.

1. Is this dessert safe for kids or pregnant women?
 The panna cotta itself is perfectly safe. However, the berry foam uses eggs that are gently heated but not fully cooked to a high temperature, which means they are not considered safe for pregnant women, very young children, the elderly, or individuals with compromised immune systems. For these groups, you can serve the panna cotta with fresh berries or a cooked berry coulis instead of the foam.

2. Can I replace the berry juice? 
Absolutely! You have many delicious options for the berry juice. Unsweetened raspberry juice or cranberry juice works wonderfully, providing a similar tart and fruity profile. For a different twist, you could even try unsweetened orange juice or passion fruit juice, though this will alter the flavor profile significantly. Always ensure the juice is unsweetened to control the sweetness of your foam.

3. Storage

  • Panna Cotta: The buttermilk panna cotta is an excellent make-ahead dessert. You can prepare it up to 2 days in advance. Keep the individual servings covered with plastic wrap and store them in the refrigerator.
