  • 2 tablespoons heavy cream (or milk/plant-based alternative for a lighter option)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon unsalted butter (for cooking the omelette)
  • 3 tablespoons smoked salmon, finely sliced or chopped into small pieces
  • 1 teaspoon fresh chives, finely chopped, plus extra for garnish (optional)

  • In a medium bowl, beat the eggs vigorously with the heavy cream until well combined and slightly foamy. This incorporates air, which is essential for a fluffy omelette. Season generously with salt and freshly ground black pepper to taste.

  • Melt the unsalted butter in an 8-inch non-stick skillet over medium heat. Swirl the butter to ensure it coats the entire bottom and sides of the pan evenly. This prevents sticking and adds flavor.

  • Pour the beaten egg mixture into the hot, buttered pan. Let it sit for a few seconds until the edges just begin to set. Using a heat-resistant spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow the uncooked egg to flow underneath and cook. Repeat this a few times, working around the pan, until most of the egg is lightly set but still visibly moist and slightly liquid on top.
  • After about 20-30 seconds of this gentle stirring and tilting, the omelette should be mostly set but still have a delicate, moist sheen in the center. This undercooked center is crucial for achieving a tender, never rubbery, omelette.
