  • In a medium bowl, combine the olive oil, pressed garlic, and Italian herbs. Stir thoroughly until all ingredients are well mixed.

  • Add the beef tenderloin pieces to the bowl with the herb oil. Toss to ensure all the steak pieces are evenly coated. Let the meat marinate for at least 5 minutes; while longer is fine, even a short soak yields great flavor.

  • Prepare your skewers. If using wooden skewers, remember to soak them in water for 30 minutes prior. Thread the ingredients onto each skewer, alternating for visual appeal and even cooking: begin with a piece of steak, followed by a strip of yellow bell pepper, then another piece of steak, a slice of red onion, a third piece of steak, and finally, a strip of red bell pepper. Repeat for all skewers.
