Ingredients

For the Tomato Soup

  • 1 tablespoon vegetable oil
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • pound tomatoes, quartered
  • cups vegetable broth
  • 1 teaspoon sugar
  • 1 sprig dried thyme
  • salt and pepper, to taste
  • 2 sprigs Fresh Parsley, chopped, for garnish

For the Grilled Cheese Sandwich

  • 4 slices white bread
  • 2 tablespoons butter, softened
  • 2 slices Gouda cheese, or Cheddar, per sandwich (total 4 slices for 2 sandwiches)

Tomato Soup Preparation

  • Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
    1 tablespoon vegetable oil
  • Add the finely chopped shallot to the pot and cook on low to medium heat for about 5 minutes, stirring occasionally, until it becomes soft and translucent. Be careful not to brown it.

  • Stir in the minced garlic and cook for another 30 seconds until fragrant. Ensure it doesn’t burn to avoid a bitter taste.

  • Add the quartered tomatoes to the pot and fry for about 1 minute. This brief frying step enhances their natural sweetness and depth of flavor.

  • Pour in the vegetable broth, then stir in the sugar and add the sprig of dried thyme. The sugar helps to balance the acidity of the tomatoes.

Alternatively, transfer it in batches to a regular blender and blend until smooth (be cautious with hot liquids). Season generously with salt and freshly ground black pepper to taste.

  • Take your bread slices and generously butter one side of each slice with softened butter. Ensure full coverage for a golden, crispy crust.

  • Place two slices of cheese between two slices of bread, with the buttered sides facing outwards. This ensures the butter comes into contact with the pan for ultimate crispiness.

If using a pan, heat it over medium-low heat, place the sandwich in, and cook for 3-5 minutes per side, pressing down gently with a spatula, until golden brown and cheese is melted. Slice diagonally and serve immediately with the hot soup.
