Easy & Quick Cream Cheese Cinnamon Rolls: Your No-Yeast Shortcut to Pure Bliss
Imagine a sweet treat that melts on your tongue, with the warm, spicy embrace of cinnamon perfectly balanced by a rich, creamy filling. These cream cheese cinnamon rolls are not just delicious; they’re a revelation for anyone seeking a quick and effortless homemade delight!
There’s nothing quite like the comforting aroma of freshly baked cinnamon rolls wafting through the house. But let’s be honest, traditional cinnamon rolls, with their yeast dough and multiple proofing stages, can be a labor of love that often feels too time-consuming for a busy morning or a spontaneous craving. What if we told you there’s a brilliant shortcut to achieve that same warm, gooey, spiced perfection without any of the waiting?
This year, I was determined to find a special, yet simple, sweet treat for brunch – something that felt indulgent but wouldn’t keep me in the kitchen for hours. Forget the usual white buns, croissants, or even the classic Christmas stollen. I wanted a showstopper dessert that could also double as a star brunch item. And I found it! In fact, I made two delightful sweet treats, and today I’m thrilled to share the first one: these incredible cream cheese cinnamon rolls. They were such a hit, disappearing almost as soon as they came out of the oven! So much so that I’m already planning to bake more for upcoming holidays – and fortunately, it’s truly no big deal to whip up another batch.

Why You’ll Adore This Cream Cheese Cinnamon Roll Recipe
What makes this specific cinnamon roll recipe stand out from the crowd? It’s all about speed, simplicity, and an incredibly satisfying result. Unlike traditional recipes that demand several hours for the dough to rise, this brilliant method leverages a common pantry staple – sliced white bread – to create wonderfully soft, chewy rolls in a fraction of the time. This means you can enjoy the magic of homemade cinnamon rolls even on the busiest of days, or when a last-minute craving strikes.
The beauty of using sliced bread as a base is that it eliminates the need for yeast, kneading, and lengthy proofing. You simply flatten the bread, slather it with a delectable cream cheese filling, roll it up, coat it in buttery cinnamon sugar, and bake. The result is a delightful bite-sized treat with crispy edges, a soft interior, and that irresistible cinnamon swirl. It truly offers the comfort and flavor of classic cinnamon rolls without the usual effort. It’s perfect for those new to baking or anyone looking for a foolproof recipe that delivers maximum flavor with minimal fuss.
The Irresistible Magic of Cream Cheese Filling
While the shortcut method is a star, the cream cheese filling is the true secret weapon that elevates these cinnamon rolls to extraordinary. A simple blend of softened cream cheese, powdered sugar, and a hint of vanilla extract creates a luscious, tangy, and incredibly smooth center. This creamy core not only adds a wonderful textural contrast but also perfectly balances the rich sweetness of the cinnamon-sugar coating. The slight tang of the cream cheese cuts through the sugar, preventing the rolls from being overly sweet and adding a sophisticated depth of flavor that will leave you wanting more than just one.
Each bite delivers a symphony of textures and tastes: the slight crispness from the baked bread exterior, the warm spice of the cinnamon, and the cool, creamy burst of the sweet cream cheese. It’s an experience that’s hard to beat, making these rolls an absolute must-try for any brunch gathering, holiday celebration, or simply as a comforting indulgence on a quiet afternoon.

-
Rolling Pin
Ingredients
- ½ white bread (enough for 10 slices)
- 100 grams cream cheese , room temperature
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 75 grams butter
- 100 grams sugar
- 1 tablespoon cinnamon , ground
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
-
Preheat oven to 180 degrees Celsius (350°F).
-
Line a baking sheet or plate with parchment paper to prevent sticking and for easy cleanup.
-
Carefully slice the crusts off each piece of white bread. This will make rolling easier and ensure a softer texture.
-
Using a rolling pin, roll each bread slice as flat and thin as possible. This creates a more uniform texture and helps the rolls hold their shape.
-
In a small bowl, combine the room temperature cream cheese with the powdered sugar and vanilla extract. Mix until smooth and creamy.
-
Melt the butter in a small saucepan or microwave-safe bowl. Once melted, pour it into a separate, shallow bowl for dipping.
-
In a third shallow bowl, stir together the granulated sugar and ground cinnamon until well combined. This will be your flavorful outer coating.
-
Take one flattened slice of bread and spread about 1 tablespoon of the cream cheese mixture evenly over one side, leaving a small border at one edge.
-
Starting from the end with the cream cheese spread all the way to the edge, roll the bread slice tightly into a log. Then, dip the entire rolled log into the melted butter, ensuring it’s fully coated.
-
Immediately after dipping in butter, roll the butter-coated log in the cinnamon sugar mixture, ensuring it is completely covered for maximum flavor and a delightful crust.
-
Place the finished roll seam-side down on the prepared baking sheet.
-
Repeat steps 7-10 for the remaining slices of bread until all rolls are assembled.
-
Bake in the preheated oven for approximately 15 minutes, or until golden brown and the cinnamon sugar is caramelized. Serve these delightful rolls immediately while they are warm and gooey. Enjoy!

Tips for Perfect Cream Cheese Cinnamon Rolls Every Time
Even though this is an incredibly easy recipe, a few extra tips can ensure your cream cheese cinnamon rolls turn out absolutely perfect:
- Choose Your Bread Wisely: Not all white bread is created equal! Opt for a slightly thicker, soft sandwich bread. Thinner slices might tear more easily when rolled. Avoid overly dense or artisanal breads as they won’t flatten as well. For the “½ white bread” ingredient, this generally means about 10-12 slices from a standard loaf.
- Room Temperature Cream Cheese: This is crucial for a smooth, lump-free filling. If your cream cheese is too cold, it will be hard to mix evenly with the powdered sugar and vanilla, resulting in a clumpy filling.
- Flattening the Bread: Roll the bread slices as thin as you can without tearing them. This helps create that classic “swirl” effect and a tender texture once baked. A slight overlap of slices can help if you want longer rolls.
- Rolling Technique: Roll the bread tightly from one end to the other. A tight roll ensures the filling stays in place and the rolls hold their shape during baking. You want a compact log, not a loose spiral.
- Don’t Overbake: Keep an eye on the rolls during the last few minutes of baking. They cook quickly, and you want them golden brown and lightly crispy, but still soft inside. Overbaking can make them dry.
- Serve Warm: These rolls are best enjoyed fresh out of the oven when the butter is melted, the cinnamon sugar is caramelized, and the cream cheese filling is wonderfully soft.
Delicious Variations to Try
While these cream cheese cinnamon rolls are perfect as is, they’re also a fantastic base for experimentation! Here are a few ideas to customize your batch:
- Nutty Crunch: Before rolling, sprinkle a thin layer of finely chopped pecans or walnuts over the cream cheese filling. They add a delightful crunch and extra flavor.
- Chocolate Lover’s Dream: Add a tablespoon of mini chocolate chips to the cream cheese filling for a chocolatey twist. Or, drizzle melted chocolate over the baked rolls!
- Citrus Zest: For a brighter flavor, add a teaspoon of fresh orange or lemon zest to your cream cheese mixture. It complements the cinnamon beautifully.
- Pumpkin Spice Rolls: During autumn, swap out some of the cinnamon for a pumpkin pie spice blend in your sugar coating for a seasonal treat.
- Icing Options: While these are fantastic without icing, you could always whip up a simple glaze using powdered sugar, a splash of milk, and a tiny bit more vanilla extract to drizzle over the warm rolls for extra sweetness.
- Fruit Infusion: Mix a very small amount of finely diced dried cranberries or finely grated apple into the cream cheese filling for a hint of fruity sweetness. Be careful not to add too much moisture.
Perfect for Any Occasion
These easy cream cheese cinnamon rolls are versatile enough for any meal or celebration. They make a fantastic addition to a holiday brunch, a quick breakfast with coffee, or a delightful dessert after dinner. Their individual size makes them perfect for serving at parties or potlucks, and they’re always a crowd-pleaser. The short preparation and baking time also means they’re ideal for those spontaneous moments when you simply need something sweet and comforting.
So, next time you’re craving that classic cinnamon roll flavor but don’t have the time for a traditional yeast dough, reach for this ingenious recipe. You’ll be amazed at how quickly you can create a batch of warm, spiced, and creamy rolls that taste truly homemade. Happy baking!
