BBQ Treat: Grilled Bananas with Whiskey, Chocolate, and Marshmallows
The inspiration for this exceptionally delicious BBQ dessert began as a fun culinary challenge during a July Foodblogswap. I had the pleasure of being paired with the insightful Dutch blog, ‘Duizenden1dag’, where I discovered a charming recipe for grilled bananas originally prepared with rum and vanilla sugar. The core idea of the Foodblogswap is to take an existing recipe and infuse it with your unique culinary perspective, adding your own personal twist. Naturally, this challenge was one I embraced with enthusiasm!
After a series of delightful experiments and, of course, plenty of enjoyable tasting sessions (a crucial part of the development process!), I decided to make a significant yet subtle change: swapping the rum for whiskey. The result was truly transformative. Whiskey, with its deep, smoky, and complex notes, added an incredible depth of flavor that harmonized perfectly with the natural sweetness of the caramelized banana. This subtle alteration elevated the entire flavor profile, giving the dessert a more mature and intriguing character. To complete the ultimate melt-in-your-mouth experience, I introduced the universally loved duo of creamy chocolate and fluffy marshmallows. The chocolate melts into a rich, luscious sauce, while the marshmallows toast to a golden, gooey perfection, creating a symphony of textures and flavors. The outcome? A dessert that not only melts in your mouth but also truly satisfies that sweet craving, leaving everyone craving more and making it an instant hit at any barbecue gathering.
The Magic of Grilling Bananas: Enhanced Sweetness and Texture
Grilling bananas unlocks an incredible depth of flavor and a wonderfully unique texture that simply cannot be achieved through other cooking methods. The high, direct heat of the grill caramelizes the natural sugars within the banana, intensifying their sweetness and transforming them into a soft, almost custard-like consistency. The banana peel acts as a perfect natural wrapper, steaming the fruit inside while charring slightly on the outside. This charring not only adds a beautiful visual appeal but also imparts a subtle, smoky essence that complements the whiskey and chocolate beautifully. This simple grilling technique truly elevates a humble fruit into a gourmet delight, making it the ideal easy BBQ dessert to conclude any outdoor feast.
Why This Grilled Banana Dessert Stands Out
Beyond its incredible taste, this grilled banana recipe offers several advantages that make it a standout dessert for any occasion, especially barbecues. Firstly, it’s remarkably quick to prepare, requiring only about 10 minutes from start to finish, which is perfect when you want a delicious treat without a long wait. Secondly, it utilizes the residual heat from your grill after you’ve finished cooking the main course, making it an energy-efficient and convenient choice. There’s no need to heat up your kitchen oven on a hot summer day! Finally, the combination of warm, sweet banana, smoky whiskey, rich chocolate, and gooey marshmallows creates a multi-layered flavor profile that’s both comforting and exciting, offering a sophisticated twist on traditional campfire desserts.
Tips for the Best Grilled Bananas: Unlock Maximum Flavor and Gooeyness
To ensure your grilled bananas turn out perfectly every time, keep these essential tips in mind. They’re designed to help you achieve the ideal balance of sweetness, texture, and flavor that makes this dessert so irresistible.
- Choose Ripe but Firm Bananas: This is arguably the most crucial tip for success. While very ripe bananas are sweet, if they’re too soft and mushy, they will likely fall apart on the grill and be difficult to handle. Look for bananas that have a few brown spots on their peel, indicating they are sweet and flavorful, but still firm enough to hold their shape during the grilling process and when sliced. This balance ensures a tender interior without turning to liquid.
- The Whiskey Factor for Depth: The smoky, rich flavor of whiskey truly elevates this dessert, pairing magnificently with the sweet, grilled banana. It adds a layer of complexity and warmth that makes the dessert feel more sophisticated. Don’t have whiskey on hand, or prefer a different flavor? Get creative! Dark rum will lend a more tropical, slightly molasses-like sweetness, while amaretto offers a delightful almond nuance. For a kid-friendly version or if you prefer to skip the alcohol entirely, a creamy caramel sauce or a dash of vanilla extract are excellent substitutes, adding a familiar comforting sweetness without the spirits.
- Mini Marshmallows are Your Best Friend: Their small size ensures they melt quickly and evenly, creating that perfect gooey, toasted topping without scorching before the banana is heated through. If you only have larger marshmallows, simply snip them into smaller pieces with kitchen shears or a knife before adding them. This ensures consistent melting and a beautiful golden-brown finish.
- Finely Chop Your Chocolate for Even Melts: Smaller pieces of chocolate will melt much faster and spread more uniformly over the warm banana and marshmallows. This ensures every bite is filled with smooth, melted chocolate rather than hard chunks. When choosing chocolate, milk chocolate provides a classic, sweet creaminess that many love, while dark chocolate adds a more intense, sophisticated depth and beautifully balances the overall sweetness of the dessert. Feel free to use a mix of both for a richer flavor profile!
- The Indispensable Foil Boat for No-Mess Grilling: Creating a sturdy foil ‘boat’ for each banana is not just about convenience; it’s absolutely essential. This ingenious trick keeps all the delicious, melty filling securely in place, preventing any leakage onto your grill grates and making cleanup an absolute breeze. It also helps to steam the banana slightly within its peel, ensuring a perfectly tender and cooked-through result while the toppings get delightfully gooey.
- Allow a Moment to Cool Before Serving: As tempting as it is to dive right into this aromatic delight, remember that the filling (especially the melted chocolate and marshmallows) gets incredibly hot on the grill. Let the grilled bananas cool down for just a couple of minutes after removing them from the heat. This brief pause prevents burnt tongues and allows the flavors to meld beautifully, making for a much more enjoyable and safe eating experience.
Creative Variations & Topping Ideas to Personalize Your Banana Boats
While the whiskey, chocolate, and marshmallow combination is a classic winner, these grilled bananas are incredibly versatile and can be customized to suit any palate. Don’t be afraid to experiment with other ingredients to make them truly your own:
- Nutty Crunch: For an added layer of texture and rich flavor, sprinkle in chopped pecans, walnuts, almonds, or even toasted hazelnuts before grilling. Toasted coconut flakes also make a fantastic and aromatic addition.
- Spice It Up: A pinch of warm spices like cinnamon, nutmeg, a dash of cardamom, or even a tiny amount of cayenne pepper can add an unexpected and delightfully complex warmth that complements the banana and chocolate.
- Saucy Delight: After grilling, drizzle with extra gourmet caramel sauce, butterscotch, dulce de leche, or even a fresh berry compote for an added layer of indulgence. A dollop of whipped cream or a scoop of vanilla ice cream makes them even more decadent.
- Different Chocolates: Explore beyond milk and dark! White chocolate chips, chocolate chunks with nuts, or even flavored chocolate bars (like mint chocolate or orange chocolate) can introduce exciting new dimensions.
- Candy Crush: For a super sweet and fun treat, sprinkle crushed candy bars (such as Snickers, Reese’s peanut butter cups, or Heath bars) into the banana opening before grilling.
- Kid-Friendly Fun: Omit the whiskey and load them up with mini chocolate chips, colorful sprinkles, a variety of marshmallows, or even crushed cookies for a delightful and safe treat for younger guests.
Grilling Your Banana Boats to Perfection: Method Tips
Achieving the perfect grilled banana boat is straightforward with a few key steps. First, ensure your grill is preheated to a medium heat (around 350-375°F or 175-190°C). While you can use direct heat, indirect heat often provides a more gentle and even cooking process, preventing the bottom of the banana from charring too quickly while allowing the toppings to melt beautifully. If using direct heat, keep a close eye on them and be prepared to move them to a cooler part of the grill if they start to blacken too much.
Once your bananas are nestled in their foil boats and filled with their delicious contents, carefully place them directly on the grill grates. Close the lid to allow the heat to circulate, creating an oven-like environment that helps the chocolate and marshmallows melt evenly and become wonderfully gooey. Cook for approximately 5-7 minutes. You’ll know they’re ready when the banana peel has significantly darkened and softened, the chocolate is fully melted and glossy, and the marshmallows are beautifully puffed and lightly golden brown on top. The sweet and smoky aroma emanating from the grill will be absolutely irresistible! Carefully remove the foil boats from the grill using tongs or oven mitts, as both the foil and the filling will be extremely hot. Remember to let them cool slightly for just a couple of minutes before serving to avoid burns and to allow the delectable filling to set just enough for optimal gooeyness and enjoyment.
Serving Suggestions and Pairings
These grilled bananas are magnificent on their own, but a few simple additions can elevate them to an even more spectacular dessert. A scoop of creamy vanilla bean ice cream melting over the warm banana is a classic pairing that never disappoints. Alternatively, a dollop of freshly whipped cream can add a lightness that contrasts beautifully with the rich filling. For those who love an extra touch of decadence, consider a drizzle of extra whiskey or a complementary liqueur like Kahlúa. A sprinkle of flaky sea salt can also enhance the sweetness and chocolate flavors, adding a gourmet touch. Serve them immediately, ideally with a spoon, allowing everyone to savor the warm, gooey goodness.

Ingredients
- 2 bananas
- 2 tablespoons whiskey
- 1 oz. Milk Chocolate, finely chopped
- 2 tablespoons mini marshmallows
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
-
Tear off a piece of aluminum foil and fold it into a little tray or ‘boat’ where the banana can sit upright. This keeps the filling from leaking out.
-
Take the whole banana (with peel) and make a lengthwise cut down the middle, going about halfway deep. Gently open up the peel a bit.2 bananas
-
Drizzle one tablespoon of whiskey into the banana. Then, stuff half the chopped chocolate and half the mini marshmallows into the opening.2 tablespoons whiskey, 1 oz. Milk Chocolate, 2 tablespoons mini marshmallows
-
Do the same with the second banana.
-
Place the bananas in their foil boats on the grill. Close the lid and cook for about 5 minutes, until the chocolate is melted, and the marshmallows are soft and slightly browned on the outside.
-
Carefully take them off the grill. Let them cool for 2 minutes (the filling is super hot!). Serve right away.
Notes
- Preparation: While you can’t prep the bananas themselves in advance (they’ll quickly turn brown due to oxidation once cut), you can certainly get ahead by chopping the chocolate and preparing your marshmallows ahead of time. Store them in airtight containers until you’re ready to assemble and grill.
- Foil Tray Prep: For maximum convenience and a smoother grilling experience, you can also place the whole, unsliced bananas in their foil trays beforehand. When it’s time to grill, simply make the lengthwise cut, add your pre-measured fillings, and they’re ready to go!
- Leftovers: This dessert is truly at its best when eaten fresh and warm, straight off the grill. We strongly advise against freezing or storing leftovers, as the delightful texture of the grilled banana and melted toppings will significantly degrade upon reheating, losing their desired gooeyness and tender consistency. Enjoy them immediately for the best experience!
