Dough


  • 1 sticks butter , cold

  • â…˜ cup confectioners sugar

  • â…› teaspoon salt

  • ½ teaspoon lemon zest, biological

  • 2 cups all-purpose flour

  • 1 teaspoon vanilla extract

  • 2 egg yolks, size L

  • 2 tablespoons milk

  • 1 cup Dulce de leche

  • 4 apples, Granny smith

  • 2 tablespoons apricot jam, warm

Instructions

Prepare the dough

  • Using a food processor fitted with a knife blade, add the cold, diced butter.
  • Pulse in short bursts until the butter forms small, pea-sized particles.
  • Next, add the confectioner’s sugar, salt, lemon zest, and all-purpose flour. Pulse again until all ingredients are well blended and resemble coarse crumbs.
  • Incorporate the vanilla extract and egg yolks, then pulse three times to combine.
  • Finally, slowly pour in the milk while pulsing until the dough begins to come together and separates from the sides of the food processor bowl.
  • Remove the dough from the bowl, gently form it into a flat disc, wrap it tightly in plastic wrap, and refrigerate for 30 minutes. This chilling process is crucial for a flaky crust.
  • After chilling, roll out the dough and carefully press it into the bottom and up the sides of a 10-inch (26 cm) tart tin or springform pan. Return the prepared crust to the refrigerator for another 30 minutes to ensure it holds its shape during baking.

Prepare the toffee apple pie

  • Meanwhile, preheat your oven to 390 °F (200 °C) for a crispier crust or 350 °F (175 °C) for a softer, more traditional bake.
  • Peel, core, and thinly slice the Granny Smith apples into ¼-inch (½ cm) pieces. Granny Smiths are ideal for their tartness, which perfectly balances the sweetness of the dulce de leche.
  • Retrieve the chilled pastry-lined tin from the refrigerator. Evenly spread the luscious dulce de leche over the bottom of the crust.
  • Arrange the sliced apples neatly over the dulce de leche layer. You can create a beautiful pattern or simply spread them evenly.

Bake

  • Place the pie in the preheated oven and bake for approximately 40 minutes, or until the apples are tender and the crust is golden brown.
  • Once baked, carefully remove the pie from the oven. While still warm, gently brush the top with warmed apricot jam for a beautiful, glossy shine and an extra touch of fruitiness. Let the pie cool in the pan for about 5 minutes.
  • Carefully remove the sides of the springform pan and transfer the pie to a wire rack to cool completely to room temperature. This cooling time is essential for the dulce de leche to set properly, ensuring perfect slices.

1. Dulce de leche: For the most authentic and delicious flavor, I highly recommend making your own Dulce de Leche recipe from condensed milk. It’s surprisingly easy and adds an incomparable richness to the pie.

2. Cool: Chilling the dough thoroughly between steps prevents it from shrinking or becoming tough during baking, ensuring a perfectly tender and flaky crust. Don’t skip this crucial step!

3. Vanilla Extract: A good quality vanilla extract is key for a nuanced and delightful vanilla flavor. If possible, opt for natural vanilla extract. Even better, you can make it yourself with this homemade vanilla extract recipe, which is far more economical than store-bought small bottles and yields a superior, long-lasting product.

4. Storage & Serving Suggestions:

  • This delicious apple pie can be prepared a day in advance. For best results, gently warm it up briefly in an oven preheated to 300 °F (150 °C) before serving to revive its warmth and soften the caramel.
  • Refrigerator: Any leftovers can be stored in an airtight container in the fridge for up to two days.
  • Freezer: For longer storage, you can freeze the entire apple pie (or individual slices) for up to a month. Wrap it well in plastic wrap and then foil. Thaw in the refrigerator overnight and warm it up in the oven just before serving for that freshly baked taste.
  • Serving: This pie is exquisite on its own, but it reaches new heights when served warm with a scoop of vanilla bean ice cream or a dollop of freshly whipped cream.
