  • For ultimate crispiness, place an empty baking tray into the oven while it preheats. This hot surface will help create an immediate crisp crust on the potatoes.

  • Meanwhile, place a large pot with about 2 inches (5 cm) of water on your stove and bring it to a rolling boil.

  • While the water heats, wash the potatoes thoroughly. If keeping the skin on, scrub well. Then, cut them into your desired fry thickness (thick-cut for Flemish style or thin for classic French fries).
    2½ pounds potatoes

  • Once the water boils, carefully add the cut potatoes (fries) to the pot. Bring the water back to a boil again.

  • Cook the potatoes in the boiling water for 10 minutes. This par-boiling step ensures the insides become wonderfully soft.

  • About 8 minutes into the potato cooking time, place a frying pan with the sunflower oil on the stove and heat it until it shimmers. Once the potatoes have cooked for 10 minutes, quickly remove them from the water with a slotted spoon and immediately transfer them to the hot skillet with oil.

  • Fry the potatoes quickly for 2 minutes, tossing them continuously. This flash-frying step rapidly dries their surface and begins to form a crust, essential for that oven-baked crispiness.
