  • Prepare Dry Ingredients: In a large mixing bowl, combine all the dry ingredients: all-purpose flour, fine cornmeal, baking powder, baking soda, and salt. Whisk them together thoroughly to ensure even distribution of the leavening agents and flavor.
  • Combine Wet Ingredients: In a separate, smaller bowl, whisk together the wet ingredients: eggs, buttermilk, and the melted and cooled unsalted butter. Mix until all these components are well combined.
  • Mix Batter Gently: Pour the wet ingredient mixture into the bowl containing the dry ingredients. Mix gently with a whisk or spatula just until they are barely combined. It is perfectly normal, and even desirable, for there to be a few small lumps in the batter; avoid overmixing, as this will lead to tough pancakes. If time allows, let the batter rest for 5-10 minutes for extra fluffiness.
  • Cook the Pancakes: Heat a lightly oiled frying pan or griddle over medium heat. Once it’s hot enough (a drop of water should sizzle and evaporate), pour about ¼ cup (or one ice cream scoop) of batter per pancake onto the pan. You can make several pancakes at once if your pan is large enough to accommodate them without crowding. For example, my pan comfortably fits three pancakes.
  • Flip the Pancakes: Cook for approximately 1.5 to 2 minutes on the first side, or until you see bubbles begin to form on the surface of the batter and the edges appear set and slightly dry. Carefully flip the pancakes using a thin spatula.
