  • In a bowl, whisk together the Dijon mustard and honey to create a flavorful marinade.

  • Add the sliced cucumber to the honey mustard marinade and toss to coat evenly. Set aside to allow the flavors to infuse.

Arugula Oil Topping

  • Place the fresh arugula leaves into a blender or food processor. Pulse a few times (about three) to finely chop the leaves.
    1 oz. arugula
  • Pour in the olive oil and continue to blend until the mixture is smooth and well combined, forming a vibrant green oil.
