Prepare to delight your taste buds with a classic European sweet treat: the German Apple Strudel (Apfelstrudel). This recipe offers a simplified yet incredibly delicious approach to the beloved dessert, featuring a luscious apple pie filling encased in a wonderfully crispy, layered phyllo dough crust. Forget the long hours of stretching traditional strudel dough – you can assemble this homemade apple strudel in just about 10 minutes, then let your oven bake it to golden-brown perfection.
But what truly elevates this strudel is the accompaniment: a rich, homemade warm vanilla sauce, known as Austrian Kanarienmilch. This creamy, custardy sauce is the perfect partner, completing a delightful symphony of flavors and textures. While often associated with the holiday season or apple harvests, this easy Apfelstrudel recipe is so fantastic, you’ll want to enjoy it year-round!

Understanding German Apple Strudel (Apfelstrudel)
Apple Strudel, or Apfelstrudel as it’s known in its native Germany and Austria, is far more than just an apple pie. It’s a culinary icon, a testament to the region’s rich baking traditions, and a beloved dessert cherished across Europe. Unlike a traditional apple pie that typically features a thick, often shortcrust pastry, Apfelstrudel showcases a delicate, sweet apple filling wrapped in an incredibly thin, almost translucent crust. The magic lies in this crust, which, when properly made, delivers an unmatched crispy and flaky texture.
The secret to a non-soggy, perfectly crispy strudel filling is often breadcrumbs. These unsung heroes absorb the excess moisture released by the apples during baking, ensuring that the dough remains wonderfully crisp and the filling retains its delightful flavor without becoming watery. The apples themselves are seasoned with a comforting blend of spices, creating an aromatic and irresistible core.
Traditional Dough vs. Easy Phyllo Dough
Traditionally, an authentic apple strudel recipe involves making a special strudel dough from scratch. This dough is meticulously hand-stretched until it’s so thin you could practically read a newspaper through it. While this method yields an undeniably sublime result, it is also quite time-intensive and requires a certain level of skill and patience. Many home bakers find this process daunting, which is why this recipe opts for a fantastic shortcut: using store-bought phyllo (or filo) dough.
Phyllo dough is a brilliant substitute, offering a quick and easy way to achieve that signature crispy, layered crust without the arduous stretching process. When each sheet of phyllo is brushed with melted butter and stacked, it bakes into a remarkably delicate and shatteringly crisp exterior, perfectly mimicking the texture of traditional strudel. While some prefer puff pastry, phyllo dough offers a distinctly lighter and crispier result that truly elevates the apple filling.
The Indispensable Vanilla Sauce (Kanarienmilch)
A true German or Austrian apple strudel experience is incomplete without a generous serving of warm Kanarienmilch, a rich and creamy vanilla sauce. This isn’t just any sauce; it’s a traditional accompaniment that perfectly balances the sweetness and tartness of the apple strudel. The creamy warmth of the Kanarienmilch creates a delightful contrast with the crispy strudel, enhancing every bite. Once you try this classic combination, you’ll understand why it’s a cherished tradition and an absolute must for an authentic Apfelstrudel experience!
Essential Ingredients for Your Homemade Apfelstrudel with Vanilla Sauce
Crafting this delightful German Apple Strudel and its accompanying vanilla sauce requires a selection of fresh, high-quality ingredients. You’ll find the precise measurements detailed in the comprehensive recipe card located at the very end of this article. Here’s a closer look at what you’ll need and why each component is crucial:
Ingredients for a Flawless Apple Strudel Filling:

- Apples: The heart of your strudel! For the best texture and flavor, choose firm, tart apples that hold their shape well during baking. Excellent choices include Granny Smith (for a classic tartness), Honeycrisp (sweet and crisp), Gala (mildly sweet), or Golden Delicious (sweet and tender). A mix of two varieties can also add depth.
- Raisins: These small bursts of sweetness soften and plump up beautifully when soaked, adding a delightful chewiness and natural sugar to the filling. Golden raisins are often preferred for their milder flavor, but any type of raisin will work wonderfully. For an extra layer of flavor, consider soaking them in a little warm rum!
- Lemon Juice: More than just a flavor enhancer, lemon juice plays a crucial role in preventing your apple slices from browning (oxidizing) once they are peeled and cut. It also adds a bright, fresh tang that cuts through the sweetness of the other ingredients.
- Rum: A traditional flavoring for apple strudel, rum adds a wonderful depth and warmth to the filling. Brown rum is often favored for its richer, more complex caramel notes. Gold or white rum can also be used. If you prefer to avoid alcohol, simply substitute the rum with an equal amount of water or apple juice.
- Sugar: Regular granulated sugar is used to sweeten the apple filling, balancing the tartness of the apples and enhancing their natural flavors. Adjust the amount to your preference and the sweetness of your chosen apple variety.
- Cinnamon: The quintessential spice pairing for apples! Ground cinnamon infuses the filling with a comforting warmth and aromatic notes, creating that familiar, inviting apple pie flavor profile. A pinch of nutmeg or allspice can also be added for extra complexity.
- Bread Crumbs: These are vital for a perfectly crispy strudel. Sprinkled among the apple filling, bread crumbs absorb any moisture released by the apples during baking, preventing the phyllo dough from becoming soggy and ensuring a light, flaky crust. Fine, plain breadcrumbs work best.
- Butter (for filling and dough): Unsalted butter is preferred as it allows you to control the overall saltiness of the dish. Melted butter is brushed generously between each layer of phyllo dough, creating those distinct, crispy layers that are characteristic of a great strudel. It also adds richness to the apple mixture.
- Phyllo Dough (filo dough): The star of our easy strudel! This incredibly thin, flour-based dough bakes up into an exquisitely crispy and delicate crust. It’s crucial to keep phyllo dough covered with a damp towel while you work, as it dries out very quickly and can become brittle and difficult to handle. Ensure it’s properly thawed if using frozen phyllo.
Ingredients for Authentic Vanilla Sauce (Kanarienmilch)

- Egg Yolks: The key to a rich, thick, and creamy vanilla sauce! Egg yolks act as an emulsifier and thickener, giving the Kanarienmilch its luxurious, custard-like consistency and beautiful golden hue.
- Vanilla Extract: Essential for imparting that classic, warm vanilla flavor to your sauce. For an even more intense vanilla experience, consider using vanilla bean paste or scraping the seeds from half a fresh vanilla bean.
- Milk: Forms the base of your creamy sauce. Whole milk will yield the richest and most decadent result, but 2% milk can also be used if preferred, though it may result in a slightly thinner sauce.
- Sugar: Sweetens the sauce, balancing the richness of the egg yolks and complementing the vanilla flavor.
Step-by-Step Guide: Preparing Your Easy Apple Strudel with Phyllo Dough
Creating this delicious apple strudel is simpler than you think, especially with the convenience of phyllo dough! Below, you’ll find a detailed step-by-step guide to walk you through the process. For a printable version of the full recipe, including exact measurements and a complete recipe card, please refer to the bottom of this blog post.

- Prepare the Raisin Mixture: In a small saucepan, combine the plump raisins, dark rum (or water for a non-alcoholic version), fresh lemon juice, and 4 tablespoons of unsalted butter. Bring this mixture to a gentle boil over medium heat, stirring occasionally, until the butter is completely melted. Once melted, remove the saucepan from the heat and allow the mixture to cool completely to room temperature. This cooling process is essential as it gives the raisins time to absorb the flavorful liquid, plumping them up beautifully.
- Create the Apple Filling: While the raisin mixture cools, prepare your apples. In a large mixing bowl, combine the thinly sliced apples, the cooled raisin mixture, granulated sugar, a pinch of salt, and fragrant ground cinnamon. Add the breadcrumbs, ensuring they are evenly distributed throughout the mixture. Gently toss all the ingredients together until the apples are well coated. The breadcrumbs are crucial here, as they will absorb any excess moisture from the apples during baking, preventing a soggy strudel.
- Assemble the Phyllo Layers: Lay a large sheet of parchment paper on a clean work surface. Carefully unroll your thawed phyllo dough and immediately cover it with a slightly damp kitchen towel to prevent it from drying out. Place one sheet of phyllo dough onto the parchment paper. Using a pastry brush, generously brush the entire surface of this phyllo sheet with melted unsalted butter, working from the center outwards to avoid tearing the delicate dough. Carefully place a second phyllo sheet directly on top, align it perfectly, and brush it with butter. Repeat this layering and brushing process until you have a stack of five buttered phyllo sheets.
- Add the Apple Filling and Roll: Once your five-layer phyllo stack is ready, take approximately half of your prepared apple mixture. Spread this filling in a long, even stripe along the bottom third of the phyllo stack, leaving a small border on the sides. The stripe should be about 3-4 inches thick, running the entire length of the phyllo sheets. Carefully lift the edge of the parchment paper and begin to roll the phyllo dough over the apple filling, forming a tight cylinder. Continue rolling until you reach the end of the phyllo stack. Gently brush the entire outer surface of the rolled strudel with more melted butter.
- Bake the Strudel: Carefully transfer the rolled strudel to a baking sheet lined with baking paper, ensuring the seam side is facing down. Repeat steps 3 and 4 with the remaining phyllo sheets and apple filling to create a second strudel. Place the second strudel next to the first on the baking sheet, leaving some space between them. Before baking, lightly score the top of each strudel with a sharp knife into serving-sized portions (e.g., 6 slices per strudel). This helps with easier slicing after baking. Bake in a preheated oven at 350°F (180°C) for approximately 50 minutes, or until golden brown and crispy. Halfway through baking, rotate the baking sheet to ensure even browning.
- Prepare the Homemade Vanilla Sauce (Kanarienmilch): While your strudel bakes, prepare the rich vanilla sauce. In a medium saucepan, gently heat the milk over medium heat. Add the vanilla extract and granulated sugar, whisking continuously until the sugar is fully dissolved and the milk is hot but not yet boiling. In a separate large bowl, whisk the egg yolks until they are light and frothy. Once the milk is hot, slowly temper the egg yolks by gradually adding a small amount of the hot milk to the whisked yolks while continuously whisking. This prevents the eggs from scrambling. Once tempered, pour the egg yolk mixture back into the saucepan with the remaining milk. Cook over low heat, stirring constantly with a whisk or wooden spoon, until the sauce thickens slightly and coats the back of a spoon. Do not boil. Remove from heat and serve warm.
Serving Your Perfect Apfelstrudel: Once baked, remove the fragrant apple strudel from the oven and let it cool slightly. Slice it along the pre-scored lines. For a truly authentic experience, serve a generous slice of warm apple strudel with a dollop of your homemade Kanarienmilch (traditional vanilla sauce). For added elegance, lightly dust the apple tart with confectioner’s sugar. This sweet treat is perfect as a dessert, perhaps with a scoop of vanilla ice cream and a swirl of whipped cream (or a dollop of sour cream for a tangy contrast), or as a delightful accompaniment to a cozy cup of tea or coffee.

Notes
2. Rum Alternatives: While dark rum adds a rich, traditional flavor to the apple filling, it’s completely optional. You can easily substitute it with an equal amount of water, apple juice, or even a splash of orange juice for a non-alcoholic twist.
3. The Role of Bread Crumbs: Don’t skip the bread crumbs! They are essential for absorbing the natural moisture released by the apples during baking. This prevents the phyllo dough from getting soggy and ensures your strudel crust remains perfectly crispy and flaky.
4. Handling Phyllo Dough: Phyllo dough is delicate and dries out quickly. Always keep the unused sheets covered with a slightly damp cloth while you work. When brushing with butter, use a gentle hand and work swiftly from the center outwards to avoid tearing. If you’re using frozen phyllo, ensure it’s fully thawed in the refrigerator overnight before use.
5. Oven Temperature Adjustment: The recipe calls for a conventional oven at 350°F (180°C). If you are using a convection oven (which circulates air with a fan), you will typically need to reduce the temperature by about 30°F (20°C) to 320°F (160°C) to prevent over-browning and ensure even baking.
6. Storage Recommendations:
- Refrigerator, Unbaked: You can assemble the strudel up to two days in advance. Wrap it tightly in plastic foil and refrigerate until ready to bake.
- Refrigerator, Baked: Store any leftover baked strudel in an airtight container at room temperature for up to two days. For best results, reheat slices in the oven at 300°F (150°C) for about 15 minutes before serving to revive its crispiness.
- Freezer, Unbaked: Unbaked apple strudel freezes beautifully! Wrap it securely in plastic wrap and then aluminum foil, or place it in a freezer-safe bag, and freeze for up to one month. Bake from frozen, adding an additional 15-20 minutes to the baking time, or until golden and cooked through.
- Freezer, Baked (Not Recommended): Freezing baked apple strudel is generally not recommended as the phyllo dough tends to become soggy and lose its crisp texture upon thawing.
7. Nutritional Value: Please note that the nutritional information provided in the recipe card is an estimate per serving and may vary based on specific ingredient brands and preparation methods.
8. Variations & Enhancements: Feel free to customize your strudel! Add a handful of chopped walnuts or pecans to the apple filling for extra crunch, a sprinkle of orange or lemon zest for a brighter flavor, or a touch of ground cloves or allspice for a more complex spice profile. Serve with a dollop of crème fraîche or a scoop of your favorite ice cream for an extra treat.
