Ingredients

  • ½ kg chicken breast, chopped
  • 4 teaspoons tandoori masala , ground
  • 1 teaspoon ground turmeric, ground
  • ½ teaspoon curry powder, ground
  • ¾ teaspoon garam masala
  • ¾ teaspoon ground cumin, ground
  • ¾ teaspoon ground coriander, ground
  • 3 tablespoon plain yogurt
  • 2 teaspoons lemon juice
  • 5 cm fresh ginger, peeled and minced fine
  • 8 cloves garlic , minced fine
  • 2 teaspoons salt
  • 1 tablespoon ghee
  • 2 tablespoons vegetable oil
  • 550 gram basmati rice , soaked for 30 minutes and drained
  • 2 onions , chopped
  • 1 tablespoon tomato paste
  • fresh coriander, chopped, for garnish

Instructions

  • In a large bowl, combine 1 tablespoon (3 teaspoons) of tandoori masala powder, ½ teaspoon each of turmeric, curry powder, garam masala, cumin, and coriander powder. Add the plain yogurt, lemon juice, half of the minced ginger and garlic, and ½ teaspoon of salt. Mix all ingredients thoroughly to form a smooth, aromatic marinade.
  • Add the chopped chicken breast pieces to the prepared marinade, ensuring all pieces are thoroughly coated. Cover the bowl tightly and refrigerate for at least an hour to allow the flavors to penetrate the chicken. For the best possible flavor development and tenderness, marinate overnight.
  • Preheat your oven to a hot 230°C (450°F / gas mark 8). Spread the marinated chicken evenly on a baking tray or oven-safe dish. Roast the chicken for approximately 15 minutes, or until it is lightly charred and cooked through. Remove from oven and set aside.
  • In a large, heavy-bottomed saucepan or Dutch oven, melt the ghee with the vegetable oil over medium heat. This combination provides a rich base for the gravy.
  • Add the chopped onions, and the remaining minced garlic and ginger to the pan.
  • Sauté on high heat for 5 minutes, stirring frequently, until the onions are softened, lightly browned, and fragrant.
  • Stir in the tomato paste, an additional 1 teaspoon tandoori masala, ½ teaspoon turmeric, ¼ teaspoon each garam masala, coriander powder, and cumin, along with 1½ teaspoon salt.
  • Cook on medium heat for 2 minutes, allowing the spices to become fragrant and the tomato paste to darken slightly. Then, cover the pan and continue to cook on low heat for an additional 5 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  • If desired, add fresh green chilies (whole or slit) to the pan for extra heat and flavor. Then, gently fold in the pre-roasted chicken pieces and mix well with the rich spice mixture.
  • Cook the chicken and spice mixture on medium heat for 3 minutes, stirring gently. Afterward, cover the pan and continue to cook on low heat for an additional 10 minutes, allowing the flavors to marry and the chicken to absorb more of the gravy’s essence.
  • Gently stir in the fresh chopped coriander (cilantro) into the chicken gravy. Remove the pan from the heat and set aside while you prepare the rice.
  • Ensure the pre-soaked basmati rice is thoroughly drained and rinsed under cold water until the water runs clear.
  • In a separate large pot, bring 6 cups (1½ liters) of water to a rolling boil. Add the drained rice, then cover and lower the heat to a gentle simmer for 5 minutes, or until the rice is about half-cooked (al dente, with a slight firmness in the center).
  • Carefully drain any remaining water from the par-cooked rice using a colander. The rice should be partially cooked but still firm.
  • Now, it’s time to assemble the Biryani for “dum” cooking. In a large, heavy-bottomed saucepan (if the previous one is large enough, otherwise use a fresh one), spread a layer of the par-cooked rice at the bottom. Follow with a layer of the prepared chicken gravy. Continue to alternate layers of rice and chicken gravy, ensuring you start and end with a layer of rice on top.
  • Cover the pan tightly (you can seal the edges with a strip of dough or use a tight-fitting lid with a heavy weight placed on top to prevent steam from escaping). Cook over very low heat for 10-13 minutes. This “dum” cooking allows the rice to fully cook through, absorb the exquisite flavors from the chicken gravy, and become perfectly aromatic and fluffy. Once cooked, gently fluff the Biryani with a fork before serving hot, garnished with fresh chopped coriander.
