Ingredients

Venison with Bacon

  • 800 grams Venison steak
  • 200 grams bacon
  • 8 twigs rosemary , fresh

Green beans rolled in bacon

  • 300 grams green beans
  • 8 tablespoons garlic butter
  • 150 grams bacon
  • 12 stalks chives

Mashed potatoes with spring onions

  • 1 kg potatoes, floury
  • 1 spring onion , sliced fine
  • 50 ml milk
  • 25 grams butter
  • 1 teaspoon salt, at tastes
  • â…› teaspoon ground black pepper

Instructions

Venison with Bacon

  • Cut the venison into cubes of about 1 x ½ inch (2 x 1 cm).
  • Wrap a slice of bacon tightly around each venison cube.
  • Using a skewer, gently punch a small hole through the center of a bacon-wrapped cube.
  • Carefully remove the needles from most of the rosemary twig, leaving only a small cluster at one end. Thread the bacon-wrapped venison cubes onto the rosemary twig to create fragrant skewers.
  • Heat a small amount of oil in a skillet over medium-high heat. Sear the venison skewers on both sides for approximately 3 minutes per side, or until the bacon is crispy and the venison reaches your desired doneness (medium-rare is recommended for tenderness).

Green beans rolled in bacon

  • Preheat your oven to 390 degrees Fahrenheit (200 degrees Celsius).
  • Trim the ends of the green beans and rinse them thoroughly under cold water.
  • Fill a saucepan with about 2 inches (5 cm) of water and bring it to a rolling boil.
  • Add the green beans to the boiling water and cook for exactly 5 minutes (do not overcook). Immediately rinse them with cold water to halt the cooking process and preserve their bright color. Drain well in a colander.
  • Lay out a slice of bacon and place a teaspoon of garlic butter in the middle.
  • Place 3-4 green beans onto the bacon slice and carefully roll the bacon around the beans, creating a neat bundle.
  • Use a fresh sprig of chive to tie around the bacon-wrapped green bean bundle, securing everything in place.
  • Arrange the bundles in an oven-safe casserole dish and bake in the preheated oven for 15 minutes, or until the bacon is crispy.

Mashed potatoes with spring onion

  • Peel the potatoes and cook them in salted water until they are very tender. Drain thoroughly.
  • In a small saucepan, gently warm the butter and milk until it almost reaches a simmer. Remove from heat immediately.
  • Mash the cooked potatoes until smooth, then gradually mix in the warm butter and milk mixture until creamy.
  • Fold in the finely sliced spring onion and whisk everything together until thoroughly combined and fluffy.
  • Taste the mashed potatoes and adjust seasoning with salt and freshly ground black pepper as needed.
