And that makes this one of my favorite finger food recipes of the moment. The recipe only has three ingredients! A lovely slim recipe, but 54 kcal per bite.

  • 1 cucumber
  • 1 cup Leek Dip, in a tube or piping bag with width smooth nozzle
  • 2 oz. Bacon, strips

Instructions

  • Peel the cucumber.
    1 cucumber
  • Fry the bacon for 5 minutes on low heat and drain on kitchen paper.
    2 oz. Bacon

Preparation

  • Cut the cucumber into 1 inch (2 cm) pieces or in thin slices for appetizer bites.
  • Hollow the cucumber (not through and through, about ¼ cm bottom).
  • Pipe some Leek dip on top.
    1 cup Leek Dip
  • Top the cucumber appetizers with fried bacon.

Notes

1. Cucumber Preparation: When hollowing out the cucumber segments, use a melon scoop or a small teaspoon. It’s crucial not to hollow them all the way through, as the delicious filling would escape! Aim to leave a small border of about ¼ inch (0.5 cm) at the bottom. This also removes the moist, seedy center of the cucumber, which can make the dip watery. By removing it, the dip maintains its perfect consistency, and all the flavors are beautifully concentrated in every bite. If you prefer not to hollow, simply cut the cucumber into ½ cm slices and pipe the Heksenkaas directly on top.

2. Piping the Dip: If you don’t have the convenience of a leek dip tube (like the traditional Heksenkaas packaging), a piping bag is an excellent alternative. Fit it with a large, non-serrated nozzle and pipe an elegant swirl of dip onto each cucumber piece. No piping bag? No problem! A simple teaspoon can be used to neatly spread the filling, achieving a rustic yet charming look.

3. Bacon Perfection: After frying your bacon to a lovely golden brown and crispy texture, always remember to drain it thoroughly on kitchen paper. This extra step significantly reduces the fat content, ensuring your bacon is wonderfully crisp and not greasy, contributing perfectly to the light nature of these appetizers.
