- 2 onions, finely chopped
- 3 cloves garlic, pressed or chopped
- 1 inch fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- ½ teaspoon ground cardamom
- 1 teaspoon sea salt
- 3 tablespoons sugar
- 1 ¼ pound chuck roast, cut into small cubes
- 2 tablespoons tomato paste
- 2 cups coconut milk
- 1 cinnamon stick
- 3 bay leaves

Instructions

Put the lid on the slow cooker.

Cook on LOW for 6 to 8 hours or on HIGH for 4 to 6 hours until the beef is soft and cooked through.

Before serving, take out the cinnamon stick and bay leaves.
