Meanwhile, in a large skillet or deep pan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3 minutes until it becomes soft and translucent.2 tablespoons olive oil -
Stir in the squeezed garlic and cook for another minute until fragrant, being careful not to burn it.3 cloves garlic -
Add the peeled and deveined scampi to the skillet and cook for just a few minutes, stirring occasionally, until they turn opaque and pink. Be careful not to overcook them. Remove the cooked shrimp from the pan and set them aside.½ pound scampi -
