  • 2 teaspoons sugar

  • 3 twigs rosemary, finely chopped
  • 20 cherry tomatoes
  • 1 baguette
  • 2 tablespoons olive oil, extra vierge (for brushing baguette)
  • 2 oz. Goat cheese, with herbs and garlic (or plain goat cheese seasoned with 2 tsp Italian herbs and 1 clove garlic)

Instructions

  1. Mix the 2 tablespoons of olive oil, 2 teaspoons of sugar, 1 teaspoon of balsamic glaze, 2 minced garlic cloves, ½ teaspoon of salt, ¼ teaspoon of ground black pepper, and 3 twigs of chopped rosemary together in a bowl to form the marinade.

  2. Wash the 20 cherry tomatoes and place them in a baking dish. Cover with the prepared marinade, ensuring all tomatoes are coated. Drizzle with any remaining marinade.

  3. Place the baking dish in the Air Fryer at 350 °F (180 °C) for 8 minutes, or in a preheated oven at 390 °F (200 °C) for 20 minutes, until the tomatoes are soft and slightly burst.

  4. Meanwhile, cut the 1 baguette into slices. Cutting them diagonally usually looks nicer and provides a larger surface area.

  5. Brush each baguette slice with the remaining 2 tablespoons of olive oil and grill them in a hot pan (or under the broiler) for about 3 minutes per side, until they are golden brown and crispy.

  6. Spread the grilled baguette slices generously with the 2 oz. goat cheese with herbs and garlic.

  7. Place two stewed tomatoes on each bruschetta slice. Drizzle any leftover marinade from the baking dish over the tomatoes for an extra burst of flavor. Serve immediately and enjoy!
