Ingredients

  • 2 avocados
  • 2 tablespoons lime juice, or to taste
  • 1 shallot, finely chopped
  • 1 red chili pepper, without seeds, finely chopped
  • 1 tomato, without seeds, finely chopped
  • ½ clove garlic, pressed
  • ½ oz. fresh coriander, finely chopped

Instructions

  • Cut the avocados in half lengthwise up to the pit. Twist the halves apart. Remove the pit and scoop the flesh out of the skin with a spoon.
    2 avocados
  • Place the avocado flesh on a deep plate and mash it with a fork.
  • Squeeze about 2 tablespoons of lime juice and pour it over the avocado. This adds flavor and prevents the guacamole from turning brown.

  • Add the finely chopped red pepper, shallot, tomato, pressed garlic, and coriander. Mix everything well.
    1 shallot, 1 red chili pepper, 1 tomato, ½ clove garlic, ½ oz. fresh coriander
  • Taste the guacamole and add some extra salt, pepper, or lime juice to taste.

Notes

1. Serving tip: Serve the guacamole with extra coriander leaves, lime, or a pinch of chili flakes (if you like a bit of spice). It’s perfect with tortilla chips, on toast, or as a dip for vegetables.

2. Storage: Guacamole is best when fresh (and ready within 10 minutes anyway).
