Ingredients

  • 100 ml heavy cream
  • 300 grams dark chocolate, chopped (60-75% cocoa)
  • 1 tablespoon orange liqueur, like Grand Marnier or Cointreau (optional, see notes for substitute)
  • 1 fresh orange, zest only
  • 1 teaspoon vanilla extract
  • 50 grams Dutch unprocessed cocoa, for coating

Instructions

  • Place a saucepan over low heat and add the cream, chopped dark chocolate, and orange zest.
  • Gently heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth. Remove the pan from the heat and stir in the orange liqueur (if using) and vanilla extract until well combined.
  • Pour the ganache into a bowl and cover it directly with plastic wrap, pressing it onto the surface to prevent a skin from forming.
  • Refrigerate for at least 2 hours, or until the ganache is firm enough to roll.
  • Using two teaspoons, scoop small portions of the chilled ganache from the bowl.
  • Gently roll each portion between your hands to form smooth balls.
  • Place the Dutch unprocessed cocoa powder in a shallow dish and roll each truffle through it until evenly coated.
  • Transfer the finished truffles to an airtight container and refrigerate until ready to serve.

Notes

  • If children are going to eat the truffles, omit the orange liqueur. You can substitute with an extra teaspoon of vanilla extract or 2 teaspoons of vanilla sugar for sweetness and flavor.
  • The warmth of your hands during rolling will soften the truffles, helping the cocoa stick. Chill them again in the fridge to firm them up for serving.
  • Instead of orange liqueur, you can also use Bourbon for an extra layer of flavor and warmth. Other options include Cointreau or a good brandy.
