Instructions
Marinate for Maximum Flavor

In a medium-sized bowl, combine all the ingredients specified for the marinade: light soy sauce, salt, sugar, ground black pepper, corn flour, and baking soda. Whisk them together thoroughly until you have a smooth paste. -
Add your thinly sliced chicken breast strips to the bowl with the marinade. Ensure every piece of chicken is thoroughly coated, gently massaging the marinade into the meat. This “velveting” technique is key to achieving incredibly tender and moist chicken in your stir-fry. -
Allow the chicken to marinate at room temperature for at least 20 minutes. While it’s marinating, you can prepare your other ingredients to ensure a smooth cooking process (mise en place).
Prepare Your Delectable Fried Egg Noodles with Chicken

Bring a large pot of water to a rolling boil. Cook the egg noodles according to the package directions until they are al dente – tender but still firm to the bite. Immediately drain them and rinse quickly under cold water to stop the cooking process and prevent them from sticking together. Transfer the cooked noodles to a large bowl. -
Heat 2 tablespoons of oil in your wok or large skillet over high heat until shimmering. Add half of the finely chopped ginger and half of the minced garlic, and stir-fry for about 1 minute until fragrant. Be careful not to burn the aromatics. -
Add the marinated chicken strips to the wok, spreading them out in a single layer if possible. Stir-fry for 2-3 minutes until they are golden brown on one side. Flip the chicken pieces and cook the other side until it also turns golden brown and the chicken is mostly cooked through. -
Pour 60 mL of water into the pan, bringing it to a quick boil. Immediately cover the pan with a lid or aluminum foil. This step helps to steam the chicken, ensuring it becomes incredibly tender and fully cooked without drying out. -
Allow the chicken to steam in the water for 3 minutes. After this time, remove the lid and transfer the cooked chicken and any pan juices to a separate clean bowl. Set aside. -
Quickly wipe the wok clean with a paper towel (careful, it’s hot!). Return it to high heat and add another 1 tablespoon of oil. -
Add the remaining ginger and garlic to the hot oil and stir-fry for 1 minute until fragrant. -
Introduce the prepared vegetables – the thinly sliced carrot, shredded white cabbage, and broccoli florets – to the wok. Stir-fry vigorously for about 2 minutes, ensuring they retain a slight crunch and vibrant color. -
Pour in the remaining 80 mL of water and bring the liquid to a rapid boil. -
Cover the pan again and allow the vegetables to steam-cook for another 3 minutes on high heat. This will further tenderize them while keeping their freshness. -
Uncover the wok. Add the previously cooked chicken (along with any accumulated juices), the delicious sauce that has formed, and the prepared egg noodles to the stir-fried vegetables. -
Sprinkle in the additional salt, sugar, and light soy sauce. Toss everything together vigorously, ensuring the noodles, chicken, and vegetables are evenly coated with the rich sauce and spices. -
Continue to stir-fry for another 1-2 minutes, or until all ingredients are piping hot and thoroughly combined. Serve your delicious fried egg noodles with chicken immediately, garnished with fresh herbs like chopped green onions or a sprinkle of sesame seeds, if desired. Enjoy!
