Ingredients

  • 2 tortilla wraps
  • 2 tablespoons green pesto
  • 5 oz. mozzarella, thinly sliced
  • 8 sun-dried tomatoes, finely chopped
  • 2 tablespoons fresh basil, finely chopped

Instructions

  • Heat the tortilla briefly in a dry frying pan.
    2 tortilla wraps
  • Brush one side with a tablespoon of pesto.
    2 tablespoons green pesto
  • Divide half of the Mozzarella over the center of the wrap.
    5 oz. mozzarella
  • Place sun-dried tomatoes on both sides of the cheese.
    8 sun-dried tomatoes
  • Top with some basil leaves.
    2 tablespoons fresh basil
  • Roll up the tortilla wrap tightly and wrap it in plastic wrap. Let it cool for an hour in the refrigerator.
  • Before serving, remove the foil and cut the wrap into thin strips. Serve with some skewers.

Notes

1. Sun-dried tomatoes

  • Even better than sun-dried tomatoes are semi-sun-dried tomatoes or salad tomatoes (I can eat a bowl of those).
  • Can be replaced with thinly sliced fresh tomatoes, cherry tomatoes, or even roasted peppers.

2. Variations

  • Extra flavor: Drizzle some balsamic cream over the center of the wrap.
  • Extra vegetables: You can add grilled zucchini, eggplant, or avocado. Or thinly sliced iceberg lettuce, nice and fresh.

3. Storage and Make-Ahead Tips

  • Refrigerator: Keep the Caprese wrap snacks in the fridge until you are ready to serve them. Wrap them tightly in plastic wrap (if uncut) or store them in an airtight container if you’ve already cut them into pinwheels. This keeps them fresh and delicious for up to 2 days.
  • Freezer: These wrap rolls are not suitable for freezing. The delicate textures of the cheese and tomatoes change significantly when frozen and thawed, resulting in an unappealing consistency and flavor.
  • Make-Ahead: These pinwheels are fantastic for making ahead! Prepare them up to 24 hours in advance, roll them tightly in plastic wrap, and store them in the refrigerator. This allows the flavors to deepen and ensures they are perfectly chilled and firm for easy slicing just before serving.
