Homemade Beer Marshmallows Dipped in Chocolate: A Father’s Day Favorite
This year, for Father’s Day, I wanted to create something truly special and a little out of the ordinary. Instead of the usual cakes or pies, I ventured into the world of homemade beer chocolates, and the result was nothing short of spectacular. These unique treats are essentially fluffy marshmallows with a delightful beer-infused jelly filling, enveloped in a smooth chocolate coating, and finished with a touch of sea salt for an extra layer of flavor. They are surprisingly easy to make and taste absolutely divine, offering a gourmet experience that belies their simple preparation.
From the very first bite, these beer-infused chocolate marshmallows deliver a symphony of flavors. You’ll experience the initial sweetness of the chocolate, followed by the pillowy softness of the marshmallow and the subtle, intriguing bitterness of the beer jelly. The sprinkle of Fleur de Sel provides a critical counterpoint, enhancing all the other flavors and creating a perfectly balanced sweet and savory treat. It’s a truly indulgent and memorable dessert that’s perfect for celebrating dads or anyone who appreciates a unique flavor combination.
Why This Unique Flavor Combination Works
The marriage of beer and chocolate might sound unconventional, but it’s a culinary match made in heaven. Many craft beers, especially lighter, sweeter varieties like white beer or certain ales, carry notes that complement chocolate beautifully – think hints of caramel, roasted malt, or even fruit. When combined in a marshmallow, the beer’s subtle bitterness cuts through the richness of the chocolate and the sweetness of the marshmallow, preventing it from being overly cloying. The Fleur de Sel then amplifies these contrasting flavors, adding a burst of salinity that makes each bite more complex and satisfying. This creates a sophisticated bonbon that stands out from traditional sweets.
Top Tip for Perfect Chocolate Coating
Mastering the Art of Melting Chocolate: The Au Bain-Marie Method
Achieving a silky-smooth, evenly melted chocolate coating is crucial for these beer marshmallows. The best way to prevent your chocolate from burning, seizing, or becoming grainy is to use the traditional au bain-marie (double boiler) method. Simply heat a few inches of water in a saucepan over low to medium heat. Place a heatproof bowl (glass or metal works best) on top of the saucepan, ensuring the bottom of the bowl does not touch the simmering water. As the steam gently heats the bowl, the chocolate will slowly and evenly melt, resulting in a perfectly smooth, glossy consistency ideal for dipping. Stir occasionally with a spatula for best results. This gentle approach guarantees a beautiful, professional finish for your gourmet treats.

Ingredients
- ⅓ cups white beer
- 2 tablespoons vanilla extract
- 1 teaspoon gelatin powder
- 1⅓ cups large marshmallows
- 1 cup milk chocolate, chopped or chips
- 2 teaspoons Fleur de Sel, or coarse sea salt
All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.
Instructions
-
In a small saucepan, gently heat the beer and vanilla extract over medium-low heat until it’s steaming and almost boiling, but do not let it reach a rolling boil.⅓ cups beer, 2 tablespoons vanilla extract
-
Immediately remove the pan from the heat. Whisk in the gelatin powder until it is completely dissolved and no lumps remain. Continue stirring for about a minute to ensure full dissolution.1 teaspoon gelatin powder
-
Allow the beer-gelatin mixture to cool down completely to room temperature. It should thicken slightly to a jelly-like consistency. This cooling step is essential before assembling.
-
Take your large marshmallows and carefully cut each one in half horizontally using kitchen shears or a lightly oiled knife.1⅓ cups marshmallows
-
Lightly spread a small amount of the cooled beer jelly onto the cut side of one marshmallow half. Place the other half directly on top, gently pressing them back together to create a filled marshmallow sandwich. Repeat this process for all marshmallow halves.
-
Prepare your au bain-marie setup: Fill a medium saucepan with about 1-2 inches of water. Place a clean, heatproof bowl securely on top of the saucepan, ensuring the bottom of the bowl does not touch the water.
-
Heat the water gently over low heat, bringing it to a bare simmer. Add the chopped milk chocolate to the bowl and allow it to melt slowly, stirring occasionally until completely smooth and free of any lumps. Remove from heat but keep over the warm water to maintain fluidity.1 cup Milk Chocolate
-
Prepare a surface for your dipped marshmallows: Line a baking sheet with parchment paper or wax paper. Alternatively, for easier cleanup and quicker setting, place a wire rack over a baking tray lined with parchment paper or foil.
-
Using two forks (or a dipping tool), carefully dip each beer-filled marshmallow into the melted chocolate, ensuring it’s completely coated. Lift the marshmallow, allowing excess chocolate to drip off.
-
Immediately after dipping, while the chocolate is still wet, sprinkle a little Fleur de Sel evenly over the top of each chocolate-coated marshmallow. The salt will adhere as the chocolate sets.2 teaspoons Fleur de Sel
-
Carefully transfer the coated marshmallows to your prepared baking sheet or wire rack. Allow them to cool at room temperature or chill briefly in the refrigerator until the chocolate has completely hardened and set (this usually takes about 15-30 minutes, depending on the room temperature).
-
Continue the dipping and salting process for all remaining beer-filled marshmallows. Once set, they are ready to serve and enjoy!
Notes & Tips for Success
- Keep it Clean: To avoid sticky fingers and messy chocolate, always use two forks or a specialized chocolate dipping tool when immersing your marshmallows. This allows for easy handling and removal.
- Effortless Cleanup: For a streamlined cleanup process, place a wire rack over a baking tray that’s generously covered with parchment paper or aluminum foil. Any excess chocolate that drips off will collect on the paper, making disposal a breeze.
2. Ingredients & Flavor Alternatives
- Choosing Your Beer: For the beer jelly, a white beer (also known as Witbier or Wheat Beer) works exceptionally well, offering a subtle, fruity, and slightly spicy note that beautifully complements chocolate. Excellent choices include Hoegaarden White, Allagash White, or the traditional German Weihenstephaner Hefeweissbier. If you prefer a darker, richer flavor, you could experiment with a stout or porter, but be mindful of the beer’s bitterness affecting the final taste.
- Salt Selection: Fleur de Sel is preferred for its delicate flakes and superior flavor, providing a delightful crunch and burst of salinity. If it’s unavailable, high-quality flaky Maldon salt or a good coarse sea salt can be used as a worthy substitute.
- Chocolate Preference: The recipe calls for milk chocolate, which provides a sweet and creamy coating. However, if you’re a dark chocolate aficionado, feel free to use it! Opt for a mild dark chocolate (ideally between 60-70% cacao) to avoid overpowering the delicate beer flavor in the marshmallow.
- Marshmallow Choice: While standard large marshmallows are ideal, you can also try making your own homemade marshmallows for an extra touch of gourmet quality, ensuring a perfect texture.
3. Storage Guidelines for Freshness
- Room Temperature: These delicious treats can be stored in an airtight container at cool room temperature for up to 7 days, maintaining their delightful texture and flavor.
- Refrigerator Storage: Only consider storing them in the refrigerator if your kitchen or environment is particularly warm or humid. Chilling can sometimes alter the texture of marshmallows slightly, but it will keep them from melting. Store in an airtight container for up to 7 days.
- Freezer-Friendly: For longer enjoyment, these beer-infused chocolate marshmallows freeze beautifully! Place them in a single layer on a baking sheet to freeze solid, then transfer them to a sealed container or freezer-safe bag. They will keep well for up to 2 months. Thaw at room temperature for about 30 minutes before serving.
