Ingredients
- 565 grams bread flour
- 370 grams water , room temperature
- 2 teaspoons instant yeast
- 2 teaspoons salt

Instructions
Knead and First Rise

In a large bowl, combine the flour with the room temperature water. Mix thoroughly with a mixer (using a dough hook) or by hand until a shaggy, cohesive dough forms.

Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rest for 20 minutes. This “autolyse” step allows the flour to fully hydrate, making the dough easier to work with.

Add the instant yeast to the dough. Knead for 2 minutes to incorporate the yeast. Then, add the salt and continue kneading.

Continue kneading the dough for another 8 minutes, or until it becomes smooth, soft, and elastic. It should pass the “windowpane test” (a small piece of dough can be stretched thin enough to see light through it without tearing).

Lightly grease a clean, large bowl with a little vegetable oil. Transfer the kneaded dough into the bowl and turn it once to ensure all sides are coated with oil.

Cover the bowl with a kitchen towel or plastic wrap and let the dough rise in a warm, draft-free place for about 45 minutes, or until it has visibly doubled in size. This is your first bulk fermentation (first rise).
Second Rise and First Fold

Gently remove the risen dough from the bowl onto a lightly floured surface. Using the palm of your hand, gently flatten it into a rough rectangle. Fold the top third of the rectangle down towards the middle. Then, fold the bottom third up to the center of the rectangle, overlapping the previous fold. This action builds strength and structure in the dough.

Return the folded dough to the greased bowl, cover again, and let it rise for another 45 minutes, or until it has doubled in size. This is your second bulk fermentation (second rise).
Divide and Initial Shaping (Preshape)

Lightly sprinkle your working surface with flour to prevent sticking.

Gently turn the dough out onto your floured surface. Divide the dough into three even pieces using a dough scraper or knife. Gently shape each piece into a loose ball, then place them on the counter. Cover them with a clean kitchen towel and let the dough rest for 20 minutes. This resting period allows the gluten to relax, making the dough easier to shape in the next step.

Take one ball of dough. Using the palm of your hands, gently flatten and stretch it into a rough rectangle. Fold the top edge of the rectangle down towards the center. Use your fingertips to gently press and seal this seam along the length of the fold.

Now, take the bottom edge of the rectangle and fold it up to the center, pressing the seam firmly with your fingertips. Then, fold the entire dough in half lengthwise, bringing the top edge down towards the bottom edge. As you do this, the dough will stretch slightly. Again, pinch the final seam tightly with your fingertips to seal it securely. This folding technique builds internal tension and structure, essential for a good baguette shape.

Place the preshaped dough pieces on the counter with the seam side facing up. Cover them again with a towel and let them rest for 30 minutes.
Final Shaping (Molding) and Third Rise (Proofing)

Now, repeat the previous folding process for each dough piece. Gently flatten into a rectangle with the palm of your hands. Fold the top third down to the center, pressing the seam firmly with your fingertips. Then, fold the bottom third up to the center, pressing the seam again. Finally, fold the entire dough in half lengthwise, stretching it slightly as you roll, and pinch the final seam tightly with your fingertips to create a taut skin. This double folding ensures maximum gluten development and a fantastic, open crumb structure.

With the seam side down, place the rolled dough under the palms of your hands. Gently and evenly roll it back and forth, working from the center outwards, to lengthen it into a classic baguette shape. Continue rolling until it reaches your desired length and thickness, being careful not to degas it too much.

Line a large baking sheet with parchment paper. Carefully transfer one shaped baguette onto the parchment paper.

Shape the remaining two baguettes following the same procedure. Place them on the baking sheet. Crucially, when placing them next to each other, pull a piece of parchment paper up between each baguette to create a divider. This “couche” effect supports the baguettes as they rise and prevents them from sticking together.

Lightly cover the shaped baguettes with a clean kitchen towel or plastic wrap and let them rise for 1 hour in a warm, draft-free place. This is the final proofing, where the baguettes will gain their final volume before baking.

After about 30 minutes into the final rise (i.e., 30 minutes before baking), begin preheating your oven. Place a sturdy metal baking plate with standing borders (or any oven-safe baking dish that can hold water) on the very bottom rack of the oven. This will be used to create steam during baking.
Baking Your Perfect Baguettes

Preheat your oven to a high temperature of 465°F (240°C). Ensure the baking stone (if you are using one) and the steam pan on the bottom rack are already inside and fully heated for optimal results.

Just before the final proofing hour is complete and you are ready to bake, bring about 1 cup (200 ml) of water to a rolling boil on your stovetop.

Carefully score the top of each baguette diagonally 3-4 times with a very sharp knife or a baker’s lame. The cuts should be about â…“ of the depth of the baguette. This scoring allows the bread to expand properly and evenly during baking, giving it its characteristic shape and preventing uncontrolled tearing.

Carefully transfer the baking sheet with the scored baguettes into the preheated oven (if using a pizza stone, slide the parchment paper directly onto the hot stone). Immediately and cautiously pour the boiling water into the hot baking plate/dish on the bottom rack. Quickly close the oven door to trap the steam. This burst of moisture is critical for creating that wonderfully crunchy, golden-brown crust.

Bake for 25 minutes, or until the baguettes are a beautiful deep golden brown and have achieved that characteristic crispness. The internal temperature should be around 200-210°F (93-99°C).

Carefully remove the baked baguettes from the oven. To double-check if they are fully done, tap the bottom of a baguette; it should produce a distinctly hollow sound. Transfer them immediately to a wire rack to cool completely. Cooling is crucial for the crust to set and become truly crispy, and for the internal structure to stabilize before slicing and enjoying.

- For an even crunchier outside, bake the baguettes on a preheated pizza baking stone. This provides a more intense and even heat transfer to the base of the bread.
