  • In a medium bowl, combine the majority of the finely chopped fresh dill (reserving about ½ teaspoon for garnish), extra virgin olive oil, fresh lemon juice, sea salt, and minced garlic. Add the full-fat Greek yogurt and stir everything together until well combined and smooth. Ensure the ingredients are thoroughly mixed for an even flavor.

Then, either grate the cucumber using a box grater or finely dice it into small pieces, depending on your preferred texture. Place the prepared cucumber in a clean kitchen towel or paper towel and squeeze out as much excess liquid as possible. This step is crucial for preventing watery tzatziki.
