Ingredients

Vanilla scones

  • 375 grams self-rising flour
  • 1 teaspoon sugar
  • 30 g butter, finely chopped (cold)
  • 180 ml milk
  • 125 ml water
  • 1 vanilla pod

Blackberry pear champagne jam

  • 600 grams blackberries
  • 500 grams jam sugar
  • 400 grams pear
  • 2 tablespoons lemon juice
  • 100 ml dry champagne

Instructions

Vanilla scones

  • Preheat your oven to 220 degrees Celsius (425°F).
  • Line a baking sheet with parchment paper, preparing it for your scones.
  • Sift the self-rising flour and sugar into a large mixing bowl. Add the finely chopped, cold butter, and rub it into the flour mixture with your fingertips until it resembles coarse breadcrumbs.
  • In a separate bowl, combine the milk and water.
  • Halve the vanilla pod lengthwise and carefully scrape out the fragrant seeds. Add these vanilla seeds to the milk and water mixture, stirring gently to combine.
  • Make a well in the center of the flour and butter mixture, then pour in the vanilla-infused milk mixture.
  • Using a butter knife, gently cut and stir the liquid into the flour mixture until a soft, shaggy dough begins to form. Avoid overmixing.
  • Turn the dough out onto a lightly floured surface. Knead it very lightly, just a few times, until it comes together into a cohesive, smooth ball. Over-kneading will make the scones tough.
  • Gently press or roll the dough into a square shape, approximately 20 x 20 cm (8 x 8 inches) and about 2.5 cm (1 inch) thick.
  • Using a round scone cutter (about 6-7 cm or 2.5 inches), dip it in flour before each cut. Press straight down into the dough without twisting, and then lift. Place the cut scones onto your prepared baking sheet.
  • Gather the remaining dough scraps, lightly press them together, and form a new square. Cut out any additional rounds until all dough is used.
  • Bake the scones in the preheated oven for approximately 20 minutes, or until they are beautifully golden brown and well-risen.

Blackberry pear champagne jam

  • Begin by thoroughly washing the blackberries and draining them well. Remove any lingering stalks. In a large, heavy-bottomed pot, combine the prepared blackberries with the jam sugar.
  • Using a potato masher or fork, gently mash the blackberries a little to release their juices and break down some of the fruit.
  • Peel the pear, remove its core, and cut the flesh into small, even cubes.
  • Add the cubed pear to the blackberries in the pot.
  • Add the lemon juice and dry champagne to the fruits. Bring the mixture to a rapid boil over high heat, stirring constantly to prevent sticking.
  • Once boiling, reduce the heat to low and let the mixture simmer gently for 20 minutes. Continue to stir frequently to ensure even cooking and to prevent the jam from burning.

If it still runs easily, continue to simmer for a few more minutes and repeat the test with a fresh cold plate.
  • After filling the jam jars, turning them upside down for a short period helps create a stronger vacuum seal, which can prevent spoilage and extend shelf life by eliminating air pockets at the top.
