Mastering Hasselback Potatoes: Your Ultimate Guide to Crispy Perfection

There’s an undeniable allure to a perfectly cooked potato. While mashed, boiled, or fried potatoes are staples, the Hasselback potato offers a truly unique and delightful culinary experience. Imagine a potato with an irresistibly crispy, golden-brown exterior that crackles with every bite, revealing a luxuriously soft, tender, and creamy interior. This exquisite contrast in texture, combined with rich flavors, makes the Hasselback a standout side dish, perfect for elevating any meal, from a casual weeknight dinner to an elegant holiday feast.

My personal culinary journey to embracing these magnificent spuds began, as many wonderful food discoveries do, through the vibrant and inspiring world of food blogging. For this month’s food blog swap, I had the pleasure of delving into Lieziepeasy, a fantastic blog by Annelies, renowned for its array of delicious Dutch dishes. Annelies’s blog is beautifully organized by category, making it an absolute joy to explore. As I perused her tempting recipes, I found myself in a delightful dilemma, initially contemplating intriguing options like chopped figs with pecorino (a truly sophisticated combination) or a comforting Indian curry with cauliflower (a reliably satisfying choice). However, my eyes soon landed on a classic that had been lingering on my “must-try” list for ages: Hasselback potatoes. The decision was instantaneous; it was finally time to bring this much-anticipated recipe to life in my own kitchen.

The Allure of Hasselback Potatoes: Why This Dish Will Be Your New Favorite

My husband is, without a doubt, a devoted potato enthusiast. He would happily incorporate them into every meal, with a particular fondness for plain boiled or unfried potatoes. While I appreciate a good potato, my preference leans towards variety, enjoying them perhaps two or three times a week, and always seeking out preparations that go beyond the basic boiled version. My culinary repertoire already includes diced potato cubes, crispy oven fries, savory rösti, and hearty potato pancakes or classic baked potatoes. But with this revelation, Hasselback potatoes have officially claimed their spot as a new favorite, even earning enthusiastic approval from my husband!

Flavor That Speaks for Itself!

What truly sets Hasselback potatoes apart? The brilliance lies in their unique preparation. By carefully slicing the potato into thin, accordion-like layers – nearly all the way through, but leaving the base intact – you create an extraordinary structure. This intricate fanning technique allows butter, olive oil, and seasonings to permeate every single crevice, ensuring maximum flavor infusion and an incredibly even bake. As these meticulously cut potatoes roast in the oven, the thin slices gracefully separate and crisp up individually, while the protected core remains wonderfully soft and moist. It’s this exquisite dance of textures and deeply infused flavors that transforms a simple potato into a truly gourmet and unforgettable side dish.

The Intriguing History of Hasselback Potatoes

The Hasselback potato, known as “Hasselbackspotatis” in its homeland, boasts a fascinating origin story from Sweden. This iconic dish was first created in 1953 by chef Leif Elisson at the renowned Hasselbacken Restaurant, nestled on DjurgÃ¥rden island in Stockholm. Elisson’s innovative idea was to devise a potato preparation that was not only incredibly flavorful but also visually striking. The method of thinly slicing the potato without cutting all the way through quickly caught on, becoming a signature dish. Since its humble beginnings in a Swedish restaurant kitchen, the Hasselback potato has garnered international acclaim, celebrated for its simple elegance and its ability to transform a basic ingredient into a culinary masterpiece. It stands as a delicious testament to how creativity and a clever technique can elevate everyday food to something truly special.

Expert Tips for Achieving Perfect Hasselback Potatoes Every Time

While the recipe itself is straightforward, a few key tips can elevate your Hasselback potatoes from good to absolutely phenomenal:

  • Select the Ideal Potato Type: For that coveted fluffy interior and crispy skin, opt for starchy or floury potato varieties such as Russet (often labeled as baking potatoes), King Edward, or Maris Piper. These types break down beautifully when cooked, creating a wonderfully tender core, while their skins crisp up marvelously. Avoid waxy potatoes, as they tend to hold their shape too well and might not achieve the desired texture.
  • Master the Slicing Technique: This is arguably the most crucial step. To ensure you don’t cut all the way through the potato, place it between two wooden spoons or chopsticks laid flat on your cutting board. This clever trick acts as a stopper, allowing you to slice confidently to a consistent depth, leaving about 1 cm (approximately 0.4 inches) of the base intact. Aim for thin, even slices, ideally 2-3 mm thick, to ensure they fan out beautifully and crisp up evenly during baking.
  • Be Generous with Fat and Seasoning: The secret to truly crispy Hasselback potatoes lies in liberal basting. A mixture of butter and olive oil not only imparts rich flavor but also helps create that irresistible golden-brown crust. Brush the potatoes generously with this mixture multiple times throughout the baking process, making sure to get it deep into every fanned slice. Don’t forget to season thoroughly with salt and freshly ground black pepper initially. For an extra layer of flavor, consider infusing your butter/oil with minced garlic, dried herbs, or a pinch of paprika.
  • Embrace Patience in Baking: Hasselback potatoes require a decent amount of baking time to achieve both a tender interior and a crisp exterior. Resist the urge to crank up the heat or shorten the cooking duration. The successive basting steps are vital for building layers of flavor and developing that perfect texture. Allow the potatoes the time they need to transform into golden, fanned masterpieces.
  • Serving Temperature Matters: For the best experience, serve your Hasselback potatoes immediately after they come out of the oven. The crispy edges are at their peak when hot. If preparing ahead, they can be gently reheated in the oven, though they may lose some of their initial crispiness.

Creative Variations and Perfect Pairings

While the classic Hasselback potato, finished with fresh thyme and a dollop of sour cream, is absolutely divine, its versatility allows for endless customization to suit any palate or meal:

  • Garlic & Rosemary Infusion: Add finely minced garlic and fresh rosemary sprigs to your butter and olive oil mixture. The aromas will permeate the potatoes beautifully as they bake.
  • Cheesy Delight: During the last 15-20 minutes of baking, gently pry open the slices and sprinkle a generous amount of grated cheese, such as Parmesan, sharp cheddar, or Gruyère, between the layers. Bake until melted and bubbly.
  • Smoky Bacon Twist: Crumble crispy, cooked bacon bits over the potatoes during the final baking stage, or simply sprinkle them on as a flavorful garnish just before serving.
  • Spicy Kick: For those who enjoy a little heat, add a pinch of red pepper flakes or a dash of your favorite hot sauce to the butter/oil mixture before brushing.
  • Herb Medley: Experiment with different fresh herbs like chives, oregano, or dill. Add them in the final brushing stage or as a fresh garnish.
  • Vegan-Friendly Version: Easily adapt this recipe by swapping butter for a high-quality plant-based butter alternative or simply using extra olive oil. Nutritional yeast can be sprinkled for a cheesy umami flavor.

Hasselback potatoes are a phenomenal accompaniment to a diverse range of main courses, enhancing any meal with their gourmet flair:

  • Roasted Meats: They pair exquisitely with classic roasted chicken, succulent lamb, tender beef tenderloin, or a juicy pork roast. The rich flavors and textures complement each other perfectly.
  • Grilled Dishes: Serve them alongside grilled steaks, chicken breasts, or flavorful sausages for a hearty and satisfying plate.
  • Fish & Seafood: For a lighter meal, Hasselback potatoes offer a wonderful contrast to flaky baked salmon, pan-seared cod, or grilled shrimp.
  • Vegetarian & Vegan Mains: They are a robust and flavorful side for dishes like a lentil loaf, a mushroom wellington, a hearty vegetable stew, or a vibrant bean burger.
  • Holiday Feasts: Their impressive appearance and delicious taste make them an ideal addition to Thanksgiving, Christmas, or any festive gathering.

Ingredients

  • 800 grams potatoes , organic and floury (e.g., Russet, King Edward)
  • salt and pepper , to taste
  • 3 tablespoons olive oil , or flavored oil (e.g., rosemary or thyme oil)
  • 3 tablespoons butter, melted (or plant-based alternative for vegan)
  • 15 grams fresh thyme, leaves picked
  • 4 tablespoons sour cream , optional garnish (or crème fraîche)
  • 15 grams fresh parsley, chopped, optional garnish

All my recipes are written both in Metric (gram / ml) and US Customary (cups / pounds). Here you can select which type of amount you would like to see.

Instructions

  • Preheat your oven to 200 °C (390 °F). If using a convection oven, reduce the temperature to 180 °C (355 °F) as convection ovens tend to cook faster.
  • In a small saucepan, combine the olive oil and butter. Heat gently over low heat until the butter has completely melted and the mixture is well combined. Turn off the heat source and set aside.
  • Thoroughly wash and scrub the potatoes. You can peel them if you prefer, but leaving the skin on adds extra crispiness and nutrients. Pat them dry with a clean towel.
  • Carefully slice the potatoes into thin discs, approximately 2-3 mm thick. It’s crucial not to cut all the way through; ensure you leave about 1 cm (approximately 0.4 inches) intact at the base. A helpful trick is to place the potato between two wooden spoons or chopsticks while slicing to prevent cutting through entirely.
  • Arrange the sliced potatoes in a single layer in an oven-safe baking dish. Generously brush the potatoes with the melted butter and olive oil mixture, making sure the liquid seeps into all the delicate slices.
  • Season the potatoes liberally with salt and freshly ground black pepper to taste.
  • Place the baking dish in the preheated oven and bake for 30 minutes. After this initial bake, remove the dish from the oven and carefully brush the potatoes again with the remaining butter/oil mixture, ensuring it coats the now slightly fanned-out slices.
  • Return the dish to the oven and continue baking for another 30 minutes. At this point, the potatoes should be tender when pierced with a fork, and the edges will begin to turn golden and crispy.
  • Remove the baking dish from the oven. If there’s any butter/olive oil mixture left, give the potatoes one last brush. Then, generously sprinkle fresh thyme leaves evenly over the potatoes, allowing their fragrant aroma to infuse into the warm spuds.
  • Return the dish to the oven for a final 10 minutes. This last bake will allow the thyme to warm and the potato edges to reach their maximum crispiness. Serve immediately for the best texture and flavor.
  • For an extra touch of creamy richness and vibrant color, garnish the warm Hasselback potatoes with a dollop of sour cream and a sprinkle of fresh chopped parsley. While these garnishes are delightful, the potatoes are absolutely delicious “au naturel” as well!
