In a large bowl, using a hand mixer, cream together the sugar, softened butter, vanilla extract, and salt on high speed for about 2 minutes, until light and fluffy.1 cup sugar,

Divide the finished dough into two equal portions. -
Take one piece of parchment paper and lightly sprinkle some flour on its surface. -
Place one portion of dough onto the floured parchment paper and gently flatten it with your hands. -
Sprinkle the top of the dough with a little more flour, then cover it with a second sheet of parchment paper. -
Now, use a rolling pin to roll out the dough to an even thickness of approximately ¼ inch (½ cm). This uniform thickness is essential for even baking. Place this rolled dough (still between parchment paper) into the fridge for at least 30 minutes to chill thoroughly. Repeat the entire process with the second piece of dough. -
Preheat your oven to 350 °F (177°C) for a conventional oven or 320 °F (160°C) for a convection oven. -
Once the dough is cold, remove the top parchment paper and use your large cookie cutter to cut out shapes. Carefully transfer these cookie cutouts onto your prepared baking tray, leaving a little space between each. -
Now, take your smaller cookie cutter and press it into the center of each large cookie to create the window for the candy. Carefully remove the small dough pieces from the center. (These small cutouts can be baked alongside the larger cookies – a delicious bonus!). A pallet knife or a regular knife can help lift them easily. -
Bake the cookies for approximately six minutes, just until they are set but not browned. Then, remove them from the oven. -
Into the center of each partially baked cookie, place either a single hard candy (if it fits neatly) or about one teaspoon of finely crushed hard candies.7 oz. Hard candy -
Return the baking sheet to the oven and bake for another nine minutes, or until the candy has completely melted and appears smooth and glassy, and the cookie edges are lightly golden. -
Once baked, remove the baking sheet from the oven and let the cookies cool completely on the tray. This is crucial for the melted candy to harden into its beautiful, “glass” state. Do not attempt to move them until fully cooled.
