4 oz. bacon bits, or 6-8 slices of regular bacon, chopped -
¾ pound boneless, skinless chicken breast, cut into uniform cubes of approximately 1 x 1 inch (2 x 2 cm) -
¾ cup shredded Gouda cheese, or your favorite melting cheese like cheddar, mozzarella, or a blend -
Salt and freshly ground black pepper, to taste

Peel the potatoes and cut them into uniform pieces (e.g., quarters). Boil them in a large pot of lightly salted water for about 20 minutes, or until they are tender but still hold their shape. Drain thoroughly and allow them to cool slightly. This step ensures the potatoes are soft and creamy in the final casserole.1 ¼ pound floury potatoes

While the potatoes are cooking, steam or boil the broccoli florets. Cook them until they are crisp-tender, typically about 7 to 8 minutes. You want them to retain a slight bite, as they will cook further in the oven. Drain immediately and set aside.2 pounds broccoli

In a large skillet, fry the bacon bits (or chopped bacon slices) over medium heat until they are lightly crisp and rendered. Remove the bacon with a slotted spoon, transferring it to a plate lined with a kitchen towel to drain excess fat.
