- 200 grams potatoes , floury (e.g., Russet)
- 500 ml vegetable stock
- 500 grams spinach
- 150 grams arugula (rocket)
- 125 ml crème fraîche
- nutmeg , freshly grated, to taste
- salt and freshly ground pepper , to taste.
