  • 1 oz. walnuts, chopped
  • ½ oz. sesame seeds

  • Preheat the oven to 390 °F (200 °C) or 350 °F (180 °C) for convection. Line a baking tray with parchment paper.
  • Carefully cut each pita bread open along one edge to create a pouch.

  • Fill each pita pouch with a tablespoon of soft goat cheese, spreading it gently, then drizzle with a teaspoon of honey.

  • In a dry frying pan, toast the chopped walnuts and sesame seeds over medium-low heat for 1-2 minutes until fragrant and lightly golden. Remove immediately from heat.

  • Place the filled pita bread on the prepared baking tray. Bake for 5 minutes, or until the pita is golden and crispy and the cheese is melted. (For even crispier pita, hang them in the oven grid to stand upright).
  • Remove the pita from the oven, immediately sprinkle with the toasted walnut and sesame mixture, and serve hot.

1. Goat cheese – For the best creamy texture, use soft, natural goat cheese and allow it to come to room temperature for at least 30 minutes before filling the pita. This ensures it mixes better with the honey and melts smoothly.

2. Walnuts – Toasting the walnuts (and sesame seeds) lightly in a dry pan significantly enhances their flavor and aroma. For dietary preferences or allergies, feel free to substitute walnuts with almonds or pecans. If you have a severe nut allergy, simply omit the walnuts and sesame seeds entirely, and the recipe will still be delicious.

3. Oven – The recommended oven temperature for a conventional oven is 390 °F (200 °C). If you are using a convection oven (with a fan), you can reduce the temperature to 350 °F (180 °C) for similar results.
