  • Melt the butter over medium heat in a large saucepan and add the finely sliced shallot.
    1 tablespoon unsalted butter, 1 shallot
  • Sauté the shallot for about 2-3 minutes until it becomes translucent and fragrant, being careful not to brown it.
  • Pour in the chicken stock and bring the mixture to a rapid boil over high heat.
    4½ cup chicken stock
  • Reduce the heat to medium-low and add the peas to the simmering broth.
    3 cups fresh or frozen peas
  • Allow the soup to gently simmer for 25 minutes, or until the peas are very tender and their flavor has fully developed.
  • Carefully purée the soup directly in the saucepan using an immersion blender until it is completely smooth. For an extra silky texture, strain the puréed soup through a fine-mesh sieve into a clean pot, discarding any solids.
  • Reheat the sieved soup gently over low heat until it is hot again, but do not boil.
  • Ladle the hot soup into individual serving bowls. Drizzle about half a spoonful of heavy cream into the center of each bowl.

  • Garnish each serving with finely sliced chives and strips of Prosciutto. Serve immediately.
