Ingredients

60 ml gin , herbal gin gives extra taste and depth -
50 grams sugar (granulated or superfine for quicker dissolving) -
2 peaches , ripe, cut into quarters, pit removed -
2 plums, ripe, cut into quarters, pit removed -
½ honeydew melon, deseeded and cut into small, bite-sized cubes -
750 ml Cava, or other dry sparkling wine like Prosecco -
1 liter sparkling water (chilled)

Step 1: Infuse the Gin. In a large, sturdy glass jug or pitcher, combine the gin with the granulated sugar. Stir them together until the sugar begins to dissolve. -
Step 2: Dissolve the Sugar. Allow the gin and sugar mixture to sit for about 5 minutes. Then, stir vigorously again to ensure that all the sugar has completely dissolved, creating a sweet and aromatic gin base. -
Step 3: Add the Sparkling Wine. Carefully pour in the chilled Cava or your chosen sparkling wine into the jug. Stir gently to combine the liquids without losing too much fizz. -
Step 4: Incorporate the Fruit. Add the prepared peaches, plums, and honeydew melon to the wine mixture. Stir again gently. Place the jug in the refrigerator and chill for at least 2-4 hours, or preferably longer, to allow the fruit flavors to infuse. -
Step 5: Final Sparkle and Serve. Just before serving, remove the sangria from the refrigerator. Top it off with the chilled sparkling water and, if desired, add plenty of ice cubes. Garnish with fresh mint, lemon, or lime slices. Serve immediately and enjoy!
