  • 800 grams Deer steak
  • 200 grams bacon

Green Beans Rolled in Bacon

  • 300 grams green beans
  • 8 tablespoons garlic butter
  • 150 grams bacon
  • 12 stalks chives

Mashed Potatoes with Spring Onion

  • 1 kg potatoes, floury (e.g., Russet, Maris Piper)
  • 1 spring onion , sliced fine
  • 50 ml milk
  • 25 grams butter
  • 1 teaspoon salt, to taste
  • teaspoon ground black pepper

Deer Beef with Bacon and Rosemary Skewers

  • Cut the deer steak into uniform cubes, approximately 1 x ½ inch (2 x 1 cm) in size, to ensure even cooking.
  • Carefully wrap a single slice of bacon around each venison cube, securing it snugly.
  • Using a skewer (or the rosemary twig itself), gently punch a hole through the center of a bacon-wrapped venison cube.
  • Remove most of the needles from the rosemary twigs, leaving only a small cluster at one end. Thread the bacon-wrapped venison cubes onto the prepared rosemary twigs, creating aromatic skewers.
  • Heat a generous amount of oil in a skillet over medium-high heat. Sear the venison skewers for about 3 minutes per side, or until the bacon is crispy and the venison reaches your desired doneness (medium-rare is recommended for tenderness). Remove from heat and let rest.

Green Beans Rolled in Bacon

  • Preheat your oven to 390 degrees Fahrenheit (200 degrees Celsius).
  • Trim the ends off the green beans and rinse them thoroughly under cold water.
  • Fill a large pan with about 2 inches (5 cm) of water and bring it to a rolling boil.
  • Add the green beans to the boiling water and cook for exactly 5 minutes (to keep them crisp-tender). Immediately drain the beans and rinse them with cold water to stop the cooking process and preserve their vibrant color. Drain thoroughly in a colander.
  • Lay out a slice of bacon and place approximately one teaspoon of garlic butter in the middle.
  • Arrange 3-4 blanched green beans on top of the garlic butter, then carefully roll the bacon around the beans to form a neat bundle. Repeat for all beans.
  • Gently tie each bacon-wrapped green bean bundle with a sprig of chive to hold everything together and add a touch of fresh aroma.
