  • 200 grams self-rising flour
  • teaspoon salt
  • 1 egg, size L, beaten
  • 225 grams sugar
  • 1 teaspoon vanilla extract
  • 125 grams butter , unsalted + 1 tablespoon melted butter
  • 3 tablespoons cane sugar

Instructions

  • In a bowl, combine the self-rising flour and salt. Whisk briefly to ensure they are well mixed.
  • In a separate, larger bowl, cream the butter using an electric mixer until it becomes light and fluffy, about 2-3 minutes.
  • Gradually add the granulated sugar to the creamed butter, one spoon at a time, mixing well after each addition until fully incorporated and the mixture is pale and creamy.
  • Beat in the egg and vanilla extract, mixing for approximately 3 minutes until everything is well combined and smooth.
  • Gently fold in the flour mixture until just incorporated. Do not overmix. Cover the bowl and place the dough in the fridge for at least 15 minutes to firm up and become less sticky, which makes it easier to handle.
  • After chilling for about fifteen minutes, the dough should be firm enough to shape. Form it into a log with a diameter of about 2 inches (5 cm).
  • Sprinkle the cane sugar generously over a clean surface or a plate. Roll the dough log through the cane sugar, ensuring it’s evenly coated on all sides. You don’t need to sweeten the very ends.
  • Wrap the sugared dough log tightly in plastic wrap. Return it to the refrigerator to chill for at least half an hour, or even longer for firmer cookies that hold their shape better. This cooling time is crucial for preventing the cookies from spreading too much.
  • Towards the end of the chilling period, preheat your oven to 355 degrees Fahrenheit (180 degrees Celsius).
  • Lightly butter a baking sheet with the additional tablespoon of melted butter. Alternatively, line it with parchment paper for easy cleanup.
  • Carefully unwrap the chilled dough log and slice it into uniform rounds, about 5 mm (approximately ¼ inch) thick.
  • Arrange the cookie slices on the prepared baking sheet, leaving about 4 inches (10 cm) of space between each to allow for spreading. If you have leftover dough slices, keep them in the fridge to prevent them from becoming too soft while you bake the first batch.
  • Place the baking sheet in the preheated oven and bake for approximately 13 minutes, or until the edges of the cookies turn a light golden brown. The centers might still look a little soft, but they will firm up as they cool.
  • Once baked, remove the cookies from the oven and let them rest on the baking sheet for 5 minutes. This brief cooling period allows them to firm up slightly, making them easier to transfer without breaking. Then, carefully move them to a wire rack to cool completely.
  • If you have additional dough remaining, repeat the greasing/lining of your baking sheet and continue with steps 10-13 until all your delicious homemade cookies are baked.
