Prepare the Dough

  • In a large bowl, whisk together the egg, lukewarm milk, lukewarm water, granulated sugar, softened butter, and instant yeast until everything is well combined and the sugar begins to dissolve. Set this mixture aside.

  • In a separate, large mixing bowl, sift the all-purpose flour, salt, and ground cardamom together. Sifting ensures a lighter dough and prevents lumps.

  • Pour the whisked wet ingredients into the bowl with the dry ingredients. Mix with a wooden spoon or a stand mixer (using a dough hook) until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 5-8 minutes until it becomes smooth, elastic, and no longer sticky. The dough should spring back when lightly poked.
  • Lightly brush a clean bowl with a neutral oil to prevent sticking. Place the dough ball inside, turning it once to coat all sides lightly with oil. Cover the bowl with plastic wrap or a damp kitchen cloth. Let the dough rise in a warm, draft-free place for about 1 hour, or until it has beautifully doubled in size. This first rise develops flavor and texture.
  • Once risen, gently punch down the dough to release the air. Transfer the dough to a lightly floured clean surface or a large piece of parchment paper.
  • Divide the dough into four equal parts. You can use a kitchen scale for precision if desired, ensuring each part is roughly the same weight. Shape each part into a smooth ball.

Layering the Dough

  • In a small bowl, thoroughly mix the ground cinnamon with the granulated sugar until well combined. This is your flavorful cinnamon-sugar filling.
    4 tablespoons ground cinnamon, ½ cup sugar
  • On a lightly floured surface or a piece of parchment paper, roll each of the four dough portions into a circle, aiming for a diameter of at least 8 inches (approximately 20 cm). Consistency in size will make for a more uniform star.
  • Place your first rolled dough circle onto a large baking sheet lined with parchment paper. Using a pastry brush, generously brush the surface of this dough circle with approximately ¼ of the softened butter, ensuring good coverage. Then, sprinkle evenly with about ⅓ of the prepared cinnamon-sugar mixture, extending nearly to the edges.

  • Carefully place the second dough circle directly on top of the first, aligning the edges as best as possible. Repeat the process: brush with another ¼ of the butter, then sprinkle with another ⅓ of the cinnamon-sugar mixture. Do the exact same steps with the third dough layer, brushing with butter and sprinkling with the last ⅓ of the cinnamon-sugar.
  • Finally, carefully place the fourth and final dough layer on top of the stack, aligning it neatly. This time, only brush this top layer with the remaining ¼ of the softened butter; do not add any cinnamon-sugar mixture to the very top.

Shaping the Bread

  • Place a small, round object (like a cookie cutter or a small glass, about 1.5-2 inches wide) in the very center of the top dough layer. Press down gently to create an outline, but do not cut through. This marks the center point. Using a sharp knife or pizza cutter, make eight equal cuts from the edge of this center circle outwards to the perimeter of the dough stack. You should now have eight distinct triangular sections, with the center still connected.
  • In each of the eight triangular sections, make a small, horizontal cut approximately two-thirds of the way through the middle of the triangle. This cut should start from the wider base of the triangle and extend towards the tip, stopping short of the tip. This cut will be used for twisting.
  • Carefully take the pointed tip of one triangle. Gently lift it and insert it into the small horizontal cut you just made, pulling it through from the underside. This creates a beautiful, layered twist. Repeat this twisting motion for all eight triangles, ensuring the twisted tips are facing upwards.
  • After twisting each triangle, gently arrange them on the parchment-lined baking sheet to form a symmetrical star shape. Ensure there’s enough space between each twisted arm of the star for it to expand during baking.
  • To define the star points and give it a beautiful “flower-like” appearance, gently pinch the two bottom corners of each twisted triangle together. This creates a neat, pointed end for each arm of the star.

Baking

  • In a small bowl, whisk together the ¼ cup of milk with the 1 tablespoon of sugar until the sugar has completely dissolved. This creates a simple yet effective milk wash for a golden crust.

  • Using a pastry brush, gently and evenly brush the entire surface of your shaped star bread with the sweetened milk mixture. This wash contributes to a beautiful golden-brown color and a slight sheen on the finished bread.
  • Allow the brushed star bread to rest for an additional 15 minutes at room temperature. During this short final proof, the dough will slightly puff up, contributing to its airy texture. While it rests, preheat your oven to a high 465 °F (240°C) or 430 °F (220°C) if using a convection oven.
  • Place the baking sheet with the star bread into the preheated oven. Bake at 465 °F (240°C) for the first 5 minutes to achieve a good oven spring. After 5 minutes, carefully reduce the oven temperature to 390 °F (200°C) or 350 °F (175°C) for convection ovens, and continue baking for another 15-20 minutes, or until the bread is a beautiful golden brown and cooked through. A toothpick inserted into the thickest part should come out clean.

Drizzling

  • Once baked, carefully remove the gorgeous star bread from the oven. Let it cool on the baking sheet for about 5 minutes, allowing it to set slightly. Then, gently transfer it to a wire rack to cool further.
  • While the star bread is still warm (but not hot), generously drizzle it with the sweetened condensed milk. The warmth of the bread will allow the condensed milk to lightly melt and beautifully coat the surface, adding an extra layer of sweetness and a lovely shine. Slice and serve warm for the ultimate experience!

  • Size doesn’t have to be perfect: Don’t stress if your dough circles aren’t exactly 8 inches (ca. 20 cm) or perfectly round. Once the bread is twisted, shaped, and baked, any minor imperfections in the initial circles will be beautifully disguised, and the overall effect will still be stunning!
  • Chill before cutting for easy shaping: For much easier handling and more defined cuts when shaping the star, I highly recommend refrigerating the layered dough for about 20-30 minutes after stacking and before making your cuts. This allows the butter between the layers to firm up, making the dough less sticky and preventing the layers from sliding, which results in a cleaner, sharper star shape.
  • Don’t overcrowd the oven: Bake only one star bread at a time for optimal air circulation and even baking. If baking multiple, use separate baking sheets and rotate them halfway through the baking time.
  • Achieving the perfect rise: Ensure your rising environment is consistently warm and draft-free. A slightly warm oven (turned off, with just the light on) or a warm spot near a sunny window can work wonders. Properly activated yeast and a good rise are key to a fluffy bread.
