  • 3 sprigs rosemary, fresh, for garnish

  • If you prefer fresh grapefruit juice and don’t have store-bought, begin by juicing enough grapefruits to yield 500 ml (approximately 6 medium grapefruits). Set aside.

Rosemary Sugar Syrup

  • In a small saucepan, add 250 ml (1 cup) of water and 200 grams (1 cup) of granulated sugar. Bring the mixture to a gentle boil over medium heat, stirring continuously until the sugar is completely dissolved into a clear syrup.
  • Once the sugar is fully dissolved and the syrup is clear, immediately turn off the heat. Do not let it caramelize.
  • Carefully place 3 fresh sprigs of rosemary into the hot sugar syrup. Allow the rosemary to steep and marinate in the syrup for a minimum of 30 minutes at room temperature to infuse its flavor and aroma.
  • Place a clean, coarse sieve (or fine-mesh sieve) over a bowl or another clean container. Pour the rosemary sugar syrup through the sieve, separating the liquid from the rosemary sprigs. Discard the rosemary.
  • Transfer the cooled and strained sugar syrup into a clean, airtight bottle or jar. Store it in the refrigerator to chill thoroughly before use. It can be stored for up to 1 week.
