Ingredients

  • 3 oz Biscoff Cookies
  • 2 tablespoons butter, melted
  • 1 cup strawberries, fresh, hulled
  • ½ cup sugar
  • 2½ cup cream cheese, room temperature
  • ¼ cup sour cream
  • â…› teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs, size L

Instructions

  • Preheat your oven to 320 °F (160°C) for a conventional oven or 290 °F (145°C) for a fan-assisted (convection) oven.
  • Line a standard 12-cup cupcake tray with paper cupcake liners. These will make it easy to remove your mini cheesecakes later.
  • Crush the Biscoff cookies into very fine crumbs. You can do this in a food processor or by placing them in a Ziploc bag and crushing them with a rolling pin. Mix these crumbs thoroughly with the melted butter until well combined.
    3 oz Biscoff Cookies, 2 tablespoons butter
  • Place approximately one tablespoon of the cookie crumb mixture into the bottom of each lined cupcake well. Use the back of a spoon or a small, flat object to press the crumbs down firmly and evenly, forming a compact crust.
  • Transfer the cupcake tray with the crusts to the fridge and chill for 15 minutes. This step helps the crust set and prevents it from crumbling when the filling is added.
  • While the crusts are chilling, prepare the strawberry swirl. Blend the fresh, hulled strawberries in a food processor or blender until a smooth puree forms. For a silky swirl without any seeds, press the puree through a fine-mesh sieve into a small bowl. Set aside.

  • In a large mixing bowl, using an electric mixer, beat the room temperature cream cheese until smooth. Add the sugar, sour cream, vanilla extract, and salt. Continue to beat on medium speed until the mixture is completely smooth and well combined, scraping down the sides of the bowl as needed.

  • Add the eggs one at a time, mixing on low speed until each egg is just combined. It is crucial not to overmix at this stage, as too much air can cause the cheesecakes to crack during baking.

  • Remove the chilled cupcake tray from the fridge. Evenly divide the cheesecake batter among the 12 cupcake liners, filling each one about ¾ full.
  • Carefully add three small drops of the sieved strawberry puree on top of each cheesecake filling. Space them out for a nice swirl effect.
  • Using a thin skewer or a toothpick, gently swirl the strawberry puree into the cheesecake batter. A few quick motions are sufficient to create a beautiful marble pattern.
  • Bake the cheesecakes in your preheated oven for 22 minutes. They are ready when the edges are set but the very center still jiggles slightly when the tray is gently shaken. This ensures a creamy texture.
  • Once baked, remove the tray from the oven and allow the cheesecakes to cool completely to room temperature for at least 30 minutes. This slow cooling helps prevent cracks.
  • After cooling, transfer the cheesecakes (still in the tray) to the refrigerator. Chill them for a minimum of 4 hours, or ideally, overnight, to allow them to fully set and firm up.
  • Once thoroughly chilled, carefully remove the mini cheesecakes from the cupcake tray and peel off the paper liners. Serve them cold for the best experience.

Notes

1. Can I use frozen strawberries? Yes, absolutely! If using frozen strawberries, make sure to thaw them completely first. Drain off any excess liquid before pureeing them to ensure your swirl isn’t too watery.

2. Why did my cheesecakes crack? Cracks are usually caused by overbaking or cooling too quickly. Remember to pull them out of the oven when the center still has a slight jiggle. Always let them cool slowly at room temperature for at least 30 minutes before transferring them to the fridge.

3. Can I use a muffin tin without liners? While not ideal, you can. If you choose not to use paper liners, grease your muffin tin very well with butter or baking spray to prevent sticking. Silicone muffin cups are an excellent alternative for easy release if you want to skip paper liners.

4. Can I use other types of cookies for the crust? Absolutely! While Biscoff cookies add a unique, spiced flavor, you can easily substitute them with graham crackers, digestive biscuits, or even Oreo cookies for a different twist. Just ensure you use the same weight (3 oz) and mix with 2 tablespoons of melted butter.

5. Can I make these ahead of time? Yes, these cheesecakes are perfect for making ahead! Since they require significant chilling time, you can prepare them a day or two in advance. This makes them an excellent stress-free option for entertaining.

6. What about other fruit swirls? Feel free to get creative! Raspberry, blueberry, or cherry purees would also work beautifully for the swirl, following the same preparation steps.

  • Fridge: Store any leftover mini cheesecakes in an airtight container in the refrigerator for up to 5 days.
  • Freezer: For longer storage, wrap each individual cheesecake tightly in plastic wrap, then in aluminum foil. Place them in a freezer-safe bag or container and freeze for up to 1 month. Thaw in the refrigerator before serving.
