  • In a medium bowl, combine the grated fresh ginger, freshly squeezed lemon juice (or lime juice for an extra zing!), and the extra virgin olive oil. Stir well to create a fragrant and zesty dressing.
    ½ inch fresh ginger, 2 tablespoons lemon juice, 2 tablespoons olive oil
  • Add the finely chopped smoked salmon to the ginger-lemon-olive oil mixture. Gently fold the salmon into the marinade until it is thoroughly coated. Cover the bowl and place it in the refrigerator to marinate for at least one hour. This allows the salmon to absorb all the wonderful flavors.

  • Just before you are ready to serve, arrange your crispy prawn crackers on a serving platter. Spoon a small, even amount of the marinated smoked salmon mixture onto the center of each cracker.
