To begin, prepare your loaf tin. Line an 8-inch loaf tin (approximately 20 cm) with baking paper, ensuring there’s an overhang on the longer sides. This overhang will function as convenient “handles,” making it effortlessly easy to lift the cake out of the tin once it’s fully frozen and set.

Next, prepare the flavorful base for your ice cream cake. Place the 2 cups of pepernoten (kruidnoten) into a food processor. Pulse until they are transformed into fine, even crumbs, resembling coarse sand. If you don’t have a food processor, you can easily place the cookies in a sturdy resealable plastic bag and crush them thoroughly using a rolling pin or the bottom of a heavy pan.2 cups kruidnoten
